Meet the Chef: Brannen Hall
If you’ve ever wondered who’s behind the dishes at Thyme to Dine, meet Chef Brannen Hall, Owner & Head Chef based right here in Andalusia, Alabama. From the time he was standing on a stepstool in his grandma’s kitchen, “stirring the pots” (probably just water, but he didn’t care), Brannen knew he belonged at the stove. With 25+ years of experience in Italian, Greek, classic American, and steakhouse kitchens, he’s spent his life learning how to make food that feels like home—with a twist.
One of Brannen’s proudest moments as a chef came when he cooked for the producer of Hell’s Kitchen and received a personal compliment on his food—proof that his passion and hard work translate on the plate. His cooking style leans into the bold comfort of Italian and classic American cuisine, all from scratch and always with creative spins. For Brannen, it’s never “just dinner”; it’s about creating memories and relationships through food, and telling the story of every ingredient in each dish he serves.
Thyme to Dine was born from a desire to rekindle that passion—building recipes, cooking for people in an intimate setting, and treating every client like family. As a follower of Christ, Brannen believes there’s no greater joy than breaking bread with his brothers and sisters, welcoming guests to the table in a spirit of warmth and hospitality. If you’ve dined with Thyme to Dine recently, you’ve probably heard him rave about his current obsession: the chocolate espresso torte, a “heavenly” balance of sweet cream, bitter chocolate espresso, and bright raspberry to finish. When he’s not in the kitchen, Brannen wears many hats—working in automotive and construction, and serving as a sound engineer for his church.
