The smoker is going to be WORKING this Memorial Day weekend 😎🔥

We’ve got a seriously good spread lined up this weekend for friends, family, and customers, and we wanted to give everyone a little sneak peek before everything hits the smoke. (Pictures of the raw lineup are posted along with this 👀)

Here’s what Lil’ Rascal’s BBQ has going this weekend:

🍯🥓 Two 6-packs of our bacon-wrapped honey buns

🍖 Two racks of pork ribs

🥩 A Wagyu chuck roast that’s getting turned into some rich, smoky poor man’s burnt ends

🔥 Two Wagyu tri-tips cooked brisket-style — low, slow, and packed with flavor

🪓 And THREE tomahawk steaks because… sometimes you just have to go big 😅

We’re opening up pre-orders NOW so we can start planning smoke space, prep, and cook times ahead of the holiday weekend.

🔥 This Weekend’s Smoke Session 🔥

The smoker is loaded up again this weekend and we’ve got a little bit of everything rolling 😎🔥

Here’s what’s on the pit right now:

🐟 A massive salmon filet getting turned into our signature smoked salmon bites — easily one of the biggest fan favorites we’ve made so far.

🥓🍯 More bacon-wrapped honey buns seasoned with The Holy Gospel because apparently once people try them… they don’t stop asking for them 😅

🥩 Wagyu Tri-Tip seasoned with The Holy Gospel and cooked brisket-style. This method takes a lot longer, but the end result is unbelievably tender, rich, and packed with smoky flavor.

🍖 St. Louis Style Ribs
• One half rack seasoned with Honey Hog Hot 🔥
• One half rack seasoned with Holy Voodoo 🌶️

The pictures attached are just a sneak peek of what’s coming off the smoker this weekend 👀🔥

🔥 Weekend Smoke Recap 🔥

We didn’t have any orders this weekend, so we took it as an opportunity to fire up the pit and cook for ourselves… and it did NOT disappoint 😎🔥

Everything came off the smoker looking (and smelling) incredible. Here’s how we ran it:

🍗 Chicken Lollipops
• Half with Fajita
• Half with Garlic & Herb

🥩 American Wagyu Ribeyes
• One kept classic with SPG (salt, pepper, garlic)
• One with Holy Gospel + a dash of Blanco

🥓🍯 Bacon-Wrapped Honey Buns
• Finished with Holy Gospel

The pictures don’t even do it justice — everything came out juicy and full of flavor. Weekends like this are a good reminder that even when we’re not filling orders, we’re still putting in the work and dialing things in.

🔥 Weekend Smoke Update 🔥

No orders on the books this weekend… but that just means one thing — we get to cook for ourselves 😎🔥

Sometimes you’ve gotta take advantage of a slower weekend, fire up the pit, and just enjoy the process. Here’s what we’ve got lined up:

🥓🍯 Bacon-Wrapped Honey Buns (the kiddos love these things, so we're always looking for excuses to make more)
🍗 Chicken Lollipops — because you can’t go wrong there (not sure what we're gonna season these with, we'll probably play around with some combinations)
🥩 American Wagyu Ribeyes — reversed seared and basted with some brisket tallow. (SPG to keep things simple on one & the other was seasoned with some Gospel & Blanco)

Nothing fancy, just good food, good smoke, and a chance to keep dialing things in.

Even when things slow down, the fire doesn’t go out — it just gives us time to get better.

Decided to share a little Lil’ Rascal’s love at work this week and brought in 27 bacon-wrapped honey buns for the crew…

…and they didn’t stand a chance 😅

We ran:
🥓 Half with The Gospel
🥓 Half with Honey Bacon Hog

Sweet, smoky, salty — the kind of combo that disappears real fast.

Big shoutout to the operators and coworkers I get to work with every day — y’all absolutely wiped these out before first break was even over. I appreciate each and every one of you 👊🔥

Only problem is… I didn’t make nearly enough 😬
Second shift didn’t even get a shot, so I guess I know what I’ll be doing again soon.

🔥 Brisket Going on the Smoker This Weekend 🔥

We’re firing up the pit for a full brisket this weekend no matter what — mainly because we ran out ourselves and that’s just not a problem we’re willing to live with 😅🔥

That said… if there’s any interest, we can absolutely throw on additional briskets depending on demand.

🔥 Pork Belly Weekend at Lil’ Rascal’s BBQ 🔥

The smoker is loaded up this weekend with something special — three half pork bellies going on the pit, cooked six different ways so we can bring a whole lineup of flavor to the table.

Here’s what’s hitting the smoke:

🥓 Honey Bacon Hog
🥓 Texas Sugar
🥓 Hickory
🥓 Honey Hog
🥓 Garlic & Herbs
🥓 Hail Mary

That means every quarter section of pork belly is getting its own personality — from sweet and smoky to savory and bold. It’s going to be a pretty incredible spread once everything renders down and that bark sets in 🔥

We also want to give a big shoutout to Anthony and his wife, who have been some of the most dedicated supporters of Lil’ Rascal’s BBQ. They’ve been with us since early on and definitely have a serious appreciation for the pork belly! We’re grateful for customers like them who keep the smoke rolling and believe in what we’re building here.

We even got a shot with one of our Pitmasters in training, Charlie helped prep, season, and get these bellies going on the smoker. Thank you again to everyone who continues to support our little family BBQ operation. Seeing people get excited about the food we cook makes all the long hours around the pit worth it.

Hey y’all — we know it’s been a little quiet on our end, but we’re still here and the smoker is DEFINITELY still alive 😎🔥

Life and work have been running wide open lately, and as much as we’d rather be tending the fire 24/7, real life had to take priority for a bit. We appreciate everyone sticking with us while things have been busy!

🥩 This Weekend’s Smoke Plan

This weekend we’re running a little brisket experiment 👀

We’ll be smoking two full briskets from two different vendors as a quality test. The goal is to compare flavor, texture, and overall quality — and potentially introduce alternate pricing options depending on the cut and grade of meat.

If anyone wants to grab some brisket from this weekend’s cook, just shoot us a message and we’ll work out pricing and quantities.
