Brown Butter Chocolate Chip Cookies 🍪🤎

Soft centers, crispy edges, pools of melted chocolate, and that deep nutty brown butter flavor… these are SO good.

⬇️ Recipe ⬇️

Dry Ingredients:
• 250g flour
• 8g baking soda
• 2g salt
• 25g buttermilk powder

Wet Ingredients:
• 170g brown butter
• 185g dark brown sugar
• 15g white sugar
• 2 eggs + 1 egg yolk
• 20g vanilla extract
• 12g instant coffee
• 10g warm water

Add Ins:
• 1.5 bars semi sweet chocolate
• 1.5 bars bittersweet chocolate
• Flakey sea salt for topping

Instructions:
1. Preheat oven to 350°F.
2. In a small bowl combine flour, baking soda, salt, and buttermilk powder.
3. Brown your butter until it has dark brown bits and smells nutty/butterscotch-like. Let cool slightly.
4. In another small bowl combine warm water, instant coffee, and vanilla extract.
5. In a mixing bowl add brown butter, sugars, eggs, egg yolk, and coffee mixture.
6. Mix on low for 30 seconds. Scrape the bowl, then mix on medium-medium high until lighter in color and slightly fluffy.
7. Add dry ingredients and mix on low just until combined. Don’t overmix.
8. Roughly chop chocolate bars into chunks and fold into the dough.
9. Cover and refrigerate for at least 30 minutes.
10. Scoop 52g cookie dough balls onto a lined baking sheet, leaving space between each cookie.
11. Bake for 13 minutes.
12. Let cool on the baking sheet for 1-2 minutes, then top with flaky sea salt.
13. Transfer to a cooling rack and enjoy

Homemade Philly Style Pretzels 🥨

Soft, chewy, salty, and SO good fresh out of the oven 🤍

Ingredients

* 1½ cups warm water (110–115°F)
* 1 tbsp sugar
* 2 tsp kosher salt
* 1 packet active dry yeast
* 4½ cups bread flour (22 oz)
* 2 oz butter, melted
* Vegetable oil
* 10 cups water
* ⅔ cup baking soda
* 1 egg yolk + 1 tbsp water
* Pretzel salt

Instructions

1. In a mixer bowl combine warm water and sugar. Sprinkle yeast on top and let sit 5 minutes until foamy.
2. Add flour, salt, melted butter and yeast mix. Mix until dough is smooth and soft, about 4–5 minutes.
3. Place dough in an oiled bowl, cover, and let rise 1.5-2 hours or until doubled.
4. Preheat oven to 450°F. Line baking sheets with parchment paper.
5. Bring 10 cups water + baking soda to a boil.
6. Divide dough into 8 pieces. Roll each into a long rope and twist into pretzel shapes.
7. Boil each pretzel for 30 seconds, then place back on baking sheet.
8. Brush with egg wash and top with pretzel salt.
9. Bake 12–14 minutes or until deep golden brown. Cool slightly and enjoy warm 🥨

Homemade Honey Mustard:
Mix mayo, Dijon mustard, garlic powder, and honey.

Co**ha Recipe 🐚🥐🌸

The inspiration for this recipe came from Japanese milk bread. I repurposed the recipe to make it slightly sweeter and shaped it into co**has. Japanese milk bread is known for being super fluffy, soft, and melt-in-your-mouth because of the bread roux (Tangzhong). I thought this would make an amazing co**ha dough, so I gave it a try — and honestly, it’s amazing. I love how traditions, recipes, and techniques from different countries can come together so beautifully! 🤍

Bread Roux (Tangzhong)

* ¼ cup water
* ¼ cup whole milk
* 2 tbsp bread flour
Co**ha Dough
* Bread roux, room temperature (above)
* ½ cup whole milk, lukewarm
* 2 to 2¼ tsp active dry yeast
* ⅓ cup granulated sugar
* 2 tbsp buttermilk powder
* 1 whole egg
* 2⅔ cups bread flour, spooned and leveled
* 1 tsp sea salt
* ½ stick softened butter
Instructions
Bread Roux:

1. In a saucepan, mix the water, milk, and flour.
2. Heat over medium heat while whisking until it thickens into a paste.
3. Allow it to cool to room temperature.
Co**ha Dough:
1. In a small bowl, add the warm milk, sugar, and active dry yeast. Set aside and let bloom for 10–15 min. (You’ll know it’s ready when it’s foamy on top and smells ye**ty.)
2. In your stand mixer bowl, combine the flour, milk powder, salt, milk, butter, egg, and bread roux. Mix using the dough hook attachment.
3. Continue mixing until the dough becomes smooth, satiny, and pulls away from the sides of the bowl.
4. Shape the dough into a ball, cover, and let it rise until doubled in size.
Streusel Topping

* ½ cup softened butter
* ½ cup powdered sugar
* 1 cup all-purpose flour
* 2 tsp vanilla bean paste
* 1 tsp salt
* 1½ tsp cocoa powder for ⅓ of the topping, if desired
* For the purple color, I used melted mixed berry jam, which gave it color and a hint of fruity flavor. You can also use gel food coloring.
Shaping Your Co**has

1. Punch down your dough and divide it into 8 equal portions.
2. Shape each portion into a ball, creating a smooth top with surface tension.
3. Place your shaped dough balls onto a lined baking sheet about 3 in. apart.
Adding the Streusel

1. Divide your streusel into 8 portions and roll them into balls.
2. Place one ball at a time between two pieces of plastic. (I cut open a gallon-size zip-top bag.)
3. Press down using a dinner plate until you get a flat round disc.
4. Carefully peel the streusel off the plastic and place it onto your co**ha dough.
5. Very lightly score the streusel. This gives them a uniform look as they rise in the oven. Most scored designs resemble a seashell, which is how they got their name: “Co**ha.”
Final Rise & Bake

1. Preheat your oven to 350°F.
2. Cover your co**has and let them rest for 30 min. This also allows them to rise a little more.
3. Bake for 30–35 min
