Monthly Meal Prep Menu
First Course (Appetizers & Soups)
The key here is to have a few options that are easy to grab, reheat, and serve.
Batch 1: Hearty Vegetable Soup: Make a large pot of a hearty, freezable soup like lentil soup, minestrone, or a roasted butternut squash soup. Portion into containers and freeze.
Batch 2: Pre-made Salads: Prepare large batches of ingredients for salads that hold up well, like quinoa salad with roasted vegetables, a black bean and corn salad, or a simple pasta salad. Store these in airtight containers in the fridge.
Batch 3: Frozen Appetizer Components: Make and freeze components for simple appetizers, such as a batch of stuffed mushrooms or a dip like spinach and artichoke dip.
Main Course (The Core of Your Meals)
This is where the bulk of your prep will happen. Cook these large batches at the beginning of the month.
Protein 1: Shredded Chicken: Cook several pounds of chicken breast in a slow cooker or instant pot. Shred it and divide it into meal-sized portions to freeze. This can be used for:
Chicken enchiladas
Chicken quesadillas
Chicken noodle soup (using your veggie soup base)
Shredded chicken sandwiches
Chicken and rice bowls
Protein 2: Ground Meat (Beef, Turkey, or Plant-Based): Cook and season a large amount of ground meat. Freeze it in portions. This can be used for:
Pasta with marinara sauce
Taco meat for tacos, burritos, or taco salad
Shepherd's pie filling
Meatballs or meatloaf
Sauce 1: Versatile Marinara Sauce: Make a big batch of your favorite marinara sauce. Freeze in containers. Use it for:
Pasta dishes
Pizza sauce
A base for a quick chili or soup
Dipping sauce for breadsticks or mozzarella sticks
Starch/Carb 1: Quinoa or Rice: Cook a large batch of a grain like quinoa or brown rice. Freeze in portions. This is a perfect base for grain bowls and can be used as a side dish.
Starch/Carb 2: Pasta: Cook and slightly undercook large batches of pasta. Toss with a little oil to prevent sticking, then freeze. This makes it incredibly easy to create a pasta dish in minutes by simply reheating and adding sauce.
Vegetable Components: Chop and pre-roast a variety of vegetables (e.g., broccoli, carrots, bell peppers, onions) that can be easily added to stir-fries, fajitas, or served as a side.
Dessert (Sweet Treats with Little Effort)
Prepare a few freezable or no-bake desserts to have on hand.
Batch 1: Individual Crumbles or Cobblers: Make individual portions of apple or berry crumbles and freeze them before baking. On the day you want a dessert, simply pop one in the oven and bake until bubbly and golden.
Batch 2: Mason Jar Parfaits: Assemble a large batch of mason jar parfaits with yogurt, granola, and frozen berries. The berries will thaw in the fridge, creating a perfect texture.
Batch 3: Frozen Cookie Dough: Prepare a batch of your favorite cookie dough (e.g., chocolate chip, oatmeal) and roll it into a log or individual balls. Freeze the dough. When you want a fresh-baked treat, slice and bake a few cookies
