Ours began as young passionate teachers who met after joining Teach for America in San Francisco. We were recent college graduates who become instant friends living in a new city where we didn’t know anyone. That was Jenny’s version of eating healthy. Most mornings, she would microwave a Jimmy Dean “lite” breakfast sandwich and head to work chuggi
ng hazelnut creamer with a splash of coffee. When she needed to “eat better” she would just not eat as much throughout the day and throw a few pieces of broccoli on her plate at dinner. After learning that her husband had a severe gluten allergy in 2012, she embarked on a journey to learn about the healing power of food. In high school, Kristina was a competitive swimmer and water polo player who ate way too many California burritos, fast food meals, and microwavable dinners. She often felt sluggish and suffered some serious injuries that never seemed to get better. It wasn’t until college that Kristina started to learn more about food - how it was grown, where it came from, and what went into the food she regularly ate. After years of struggling with weight gain, weight loss, and a lack of energy, we knew there had to be a better way! We dedicated ourselves to do more than just learn to cook. We dedicated ourselves to cook SIMPLE and DELICIOUS meals with 10 ingredients or less. Deliciously Simple is the result of hours spent researching, watching food and health documentaries, cooking in the kitchen, and reading a few dozen cookbooks. Jenny and Kristina now know that they are providing delicious and simple recipes and tips for people to easily incorporate into their busy lives.
