Some autumn desserts deserve to arrive at the table still warm from the fire.

In Wisconsin lake country, ours is a generous 12-inch Tarte Tatin: apples slowly caramelized with butter and sugar in cast iron, covered with buttery pastry and baked until deeply golden, with the edges of the fruit becoming almost burnished in the heat.

Turned out while still warm, it needs very little. Toasted hazelnuts, a spoonful of cool crème fraîche and that rich apple caramel are enough. It is rustic in the way the best autumn food is rustic, beautiful because it hasn’t been fussed with too much.

This recipe was created for our Wisconsin autumn story, where the wood-burning oven becomes part of the gathering itself and cooking moves outdoors into the warmth of the fire, the changing landscape and the last golden light over the lake.

There is something about cooking over wood that feels completely at home beside a Wisconsin lake.

As the autumn light begins to soften, whole trout goes into the wood-fired oven with herbs, lemon and the gentle perfume of the fire. Cooked in cast iron, the fish stays beautifully moist while the skin takes on color and just enough smoke to remind you where dinner was made.

It is the kind of main course we love for outdoor entertaining: impressive when it arrives at the table, deeply connected to its setting, yet wonderfully uncomplicated once the fire is hot.

This recipe was created for our Wisconsin lakeside autumn story, exploring how fire, seasonal ingredients, changing light and thoughtful outdoor design can turn a cool-weather gathering into something warm, generous and memorable.
