🥔 Caesar Potato Casserole
🕒 Prep Time: 15 min | Bake Time: 40 min | Serves 4-6
✅ Ingredients:
3 lbs potatoes (Yukon Gold or Russet), peeled and diced
1 tablespoon olive oil
3 cloves garlic, minced
1 cup Caesar dressing (store-bought or homemade)
1 cup shredded Parmesan cheese
1 cup shredded mozzarella cheese
1/2 cup cooked bacon bits (optional)
1/4 cup chopped fresh parsley or Romaine lettuce for garnish
Salt and pepper to taste
👩🍳 Instructions:
Preheat oven:
To 375°F (190°C).
Cook potatoes:
Boil diced potatoes in salted water until just tender, about 10 minutes. Drain well.
Prepare garlic:
In a small pan, heat olive oil and sauté minced garlic until fragrant, about 1 minute.
Combine ingredients:
In a large bowl, mix cooked potatoes, garlic with oil, Caesar dressing, Parmesan, mozzarella, and bacon bits (if using). Season with salt and pepper.
Bake:
Transfer mixture to a greased casserole dish.
Bake for 30-40 minutes, until bubbly and golden on top.
Garnish & serve:
Sprinkle with fresh parsley or chopped Romaine lettuce before serving for that fresh Caesar crunch.
Tips:
For extra crispiness, broil for 2-3 minutes at the end—watch carefully!
Add grilled chicken for a fuller meal.
Use homemade Caesar dressing for a fresher flavor."
