Healthy Steak Fajita Roll-Ups
Ingredients:

For the steak roll-ups:

1 lb. thinly sliced sirloin steak, pounded thin, cut into 1"x3" strips
2 Tbsp avocado or olive oil, divided
3 bell peppers (different colors), cut into thin strips
1 large yellow onion, sliced into strips
2-3 green onions, green parts sliced
Fresh parsley or cilantro, chopped
For the fajita seasoning:

1 tsp chili powder
1 tsp ground cumin
1 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp smoked paprika
1/2 tsp sea salt
1/4 tsp ground black pepper
Instructions:

Whisk all fajita seasoning ingredients in a small bowl.
Heat 1 tablespoon oil in a large skillet over medium-high heat.
Add onions and bell peppers, season with half the fajita seasoning, and cook for 3-4 minutes until crisp-tender.
Remove peppers and onions from the pan and set aside.
Lay steak strips on a cutting board, sprinkle with remaining seasoning, and top with peppers and onions. Roll up and secure with toothpicks.
Heat the remaining oil in the skillet over medium-high heat.
Cook steak roll-ups for about 2 minutes per side until golden brown.
Sprinkle with parsley/cilantro and green onions. Enjoy while hot!

Grilled Chicken Meatballs

Ingredients:

For the Meatballs:

1 pound ground chicken
1 tablespoon sesame oil
1 tablespoon soy sauce
1 tablespoon mirin
1 teaspoon kosher salt
1 pinch freshly ground black pepper
1 pinch cayenne pepper
1/3 cup thinly sliced green onions
2 cloves garlic, crushed
2 tablespoons plain fine bread crumbs
For the Glaze:

1 tablespoon ketchup
2 tablespoons hoisin sauce
2 teaspoons grated fresh ginger
2 tablespoons rice vinegar
4 skewers

Instructions:

Mix chicken, sesame oil, soy sauce, mirin, salt, pepper, cayenne, green onions, garlic, and bread crumbs in a bowl. Chill for 30 minutes.
Preheat oven to 400°F (200°C). Line and grease a baking sheet.
Shape mixture into 16 meatballs, place on the sheet, and bake for 15 minutes.
Cool meatballs and refrigerate until needed.
Preheat grill to medium heat. Mix glaze ingredients.
Skewer meatballs and grill, brushing with glaze, for about 3 minutes per side.
Sear and brush with more glaze before serving.

Ingredients:

1/4 cup extra virgin olive oil (60 ml)
2 cod fillets (7 oz / 200 grams each)
1 egg
5 tbsp all-purpose flour
1 small onion, finely chopped
3 cloves garlic, roughly chopped
1/2 cup white wine (120 ml)
1 1/4 tsp sweet smoked Spanish paprika (3 grams)
1/2 tsp dried thyme (0.50 grams)
1 cup fish broth (240 ml)
2 potatoes
3 whole cloves of garlic
2 bay leaves
Sea salt & black pepper
Handful of chopped fresh parsley

Instructions:

1️⃣ Cut potatoes into half moon shapes (1 cm thick). Boil with garlic, sea salt, and bay leaves.
2️⃣ Heat olive oil in a pan over medium heat.
3️⃣ Season cod fillets, coat in flour and egg, then fry until golden. Set aside.
4️⃣ Sauté onion and garlic in the same pan. Add flour, then white wine, paprika, thyme, salt, and pepper.
5️⃣ Once wine's alcohol cooks off, add fish broth. Simmer until creamy, then add cod fillets. Cook until done.
6️⃣ Check potatoes are done, then serve cod and sauce over potatoes. Garnish with parsley.

1 tablespoon tomato paste
1/2 teaspoon saffron threads
1/2 teaspoon dried thyme
2 bay leaves
1/4 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
2 cups fish stock
2 cups water
1/2 cup dry white wine
1 pound firm white fish fillets (such as cod or halibut), cut into chunks
1 pound shellfish (such as mussels or clams), cleaned
1/2 pound shrimp, peeled and deveined
1/4 cup fresh parsley, chopped
Salt to taste
Crusty bread, for serving
Directions:

In a large pot, heat olive oil over medium heat. Add the onion, leeks, and garlic, and cook until softened, about 5 minutes.

Ingredients:

1 tablespoon vegetable oil
1/2 pound ribeye steak, thinly sliced
1 small onion, finely chopped
1 green bell pepper, finely chopped
1/2 cup mushrooms, finely chopped
Salt and pepper to taste
1 cup shredded provolone cheese
8 egg roll wrappers
Vegetable oil for frying
Optional: marinara sauce for dipping
Directions:

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the ribeye steak and cook until browned, about 5 minutes.
Add the onion, bell pepper, and mushrooms to the skillet. Cook until the vegetables are tender, about 3-4 minutes. Season with salt and pepper.
Remove the skillet from the heat and stir in the shredded provolone cheese until melted and well combined.
Lay an egg roll wrapper on a clean surface. Place about 2 tablespoons of the cheesesteak mixture in the center of the wrapper.

Garlic Butter Grilled Chicken Breast 😋

Ingredients:
4 boneless, skinless chicken breasts
Salt and freshly ground black pepper to taste
2 tablespoons olive oil
For the Garlic Butter:
1/4 cup butter
4 cloves garlic, minced
1 tablespoon freshly chopped parsley
1/2 teaspoon paprika (optional)
1 tablespoon lemon juice
Salt to taste

Instructions:
Preheat your grill to medium-high heat.

Season the chicken breasts with salt and black pepper, then brush them with olive oil to prevent sticking to the grill.

Grill the chicken for about 6-7 minutes on each side, depending on thickness, or until the internal temperature reaches 165°F (75°C) and the meat is no longer pink.

While the chicken is grilling, prepare the garlic butter. In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Remove the saucepan from heat and stir in the chopped parsley, paprika, and lemon juice. Season with a pinch of salt to taste.

Once the chicken is done, remove it from the grill and let it rest for a few minutes to allow the juices to redistribute.

Ingredients:

4 cups chicken or vegetable broth
2 packs of ramen noodles
1 pound mixed seafood (shrimp, crab legs, mussels)
1 corn on the cob, cut into rounds
2 sausages, sliced (optional)
1 tablespoon Old Bay seasoning
1 teaspoon garlic, minced
1 teaspoon ginger, minced
2 green onions, chopped
1 tablespoon soy sauce
1 tablespoon sesame oil
Lemon wedges, for serving

Instructions:

Bring the broth to a boil in a large pot. Cook the ramen noodles according to package instructions, then set aside.

2 cod fillets (8 oz / 250 grams each)
8 cloves garlic
1 1/2 cups cherry tomatoes (225 grams)
1/2 cup chicken broth (120 ml)
Handful fresh parsley
Pinch sea salt
Dash black pepper
Instructions:

Roughly chop the garlic, cut the cherry tomatoes in half, finely chop the parsley, and pat dry the cod fillets. Season with sea salt and black pepper.
Heat a large fry pan over medium heat and add the olive oil.
Add the cod fillets to the pan and cook for 2-3 minutes per side until fully cooked through. Remove from the pan and set aside.
In the same pan, add the garlic and sauté for 30-45 seconds. Add the cherry tomatoes and cook for 3 minutes, then add the chicken broth, 2 tbsp of parsley, sea salt, and black pepper. Simmer until the broth reduces by half.

3 tablespoons grated Parmesan cheese
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
2-3 garlic cloves, grated or finely minced
1 large lemon (juice and zest, divided)
3/4 teaspoon fine sea salt
1/2 teaspoon paprika
1/4 teaspoon black pepper
4 (8 ounce) Alaskan Cod fillets
Instructions:

1️⃣ Preheat the oven to 400°F (200°C). Line a large baking pan with parchment paper. 🔥

2️⃣ Combine olive oil and breadcrumbs in a small bowl, tossing to coat evenly. 🥄
