🧑‍🍳Brussels Sprout Soup with Bacon

1 tablespoon olive oil
4 slices bacon, chopped
1 onion, chopped
2 cloves garlic, minced
1 pound Brussels sprouts, trimmed and halved
4 cups chicken or vegetable broth
½ cup heavy cream, optional
Salt and pepper to taste

Heat the olive oil in a large pot over medium heat. Add the bacon and cook until crisp. Remove with a slotted spoon and set aside, leaving the drippings in the pot.
Add the onion and cook 4–5 minutes, until softened. Stir in the garlic and cook 1 minute more.
