Sweet Potato Coffee Cake
✨️INGREDIENTS ✨️
1 2/3 cup White Lily A-P flour (divided)
2/3 cup plus 1/2 cup packed brown sugar (divided)
1 1/2 teaspoon of cinnamon (divided)
1 teaspoon salt (divided)
3/4 cup unsalted melted butter and cooled (divided)
2/3 cup white sugar
2 large eggs (room temperature)
3/4 cup cooked and mashed sweet potato
1/3 cup buttermilk (room temperature)
2 teaspoons vanilla
1 teaspoon baking soda
1/4 teaspoon baking powder
Glaze
1 oz. softened cream cheese
1/4 teaspoon vanilla
1 cup powdered sugar
1-2 Tablespoons milk (add an additional 1tsp if needed)

1 14 1/2 oz can petite diced tomatoes
1 pound of Velveeta cut into 1" cubes
1/2 teaspoon each of garlic and onion powder

3 cups boneless, skinless chicken breast
1 cup seedless grapes
3 ribs of celery
1 medium crisp apple
1/2 cup pecans or walnuts, toasted
1/2 cup mayonnaise
1/4th cup honey
2 tbs of yellow mustard
