Good morning and happy Tuesday.
Yes, it's been awhile since I've posted. I wasn't sure anyone was reading the posts or if they were making an impact, so I took some time off. Plus, the holidays were bonkers and I had to prioritize. I'm still unsure if I'll do this every single week, but for now, here are some meal planning ideas based on what's on sale at Hays Market in Johnstown and Berthoud this week. The sale starts today and ends next Monday.
***Baby Back Pork Ribs*** $2.99/lb
slow cook in the oven all day (if you're home of course). Serve with Lamb Weston frozen potatoes, onion rings or fries $4.49/bag and fresh sugar or snap peas 2.99 for 8 oz.
***Chili***
Pork Chili meat is on sale for 2.79 or ground beef is always there too. I prefer mixing the two. Carroll Shelby's Chili Kit is 2.89 or grab some canned beans, (there are a few on sale this week) and a packet of seasoning. Grab a couple of fresh Roma tomatoes .99/lb to mix in or sprinkle on the top. If you like cheese, there are some shredded options at the back of the store. The only one on sale this week is a 2lb bag, so if you're going to use all of that, grab the Crystal Farms brand and save $5 by using your digital coupon.
***Center Cut Pork chops*** 2.19/lb
Shake & Bake or the Best Choice brand breading isn't on sale, but always affordable.
Serve with Fresh Zucchini or yellow squash 1.59/lb
***Roast Potatoes and Carrots in the crock pot***
Boneless top round roast 3.98/lb
2 lb fresh carrots 2 for $3
Little Potato Co potatoes 2 bags for $3.
I've tried all kinds of seasonings for this, but the easiest one is to just let it slow cook all day long in Better than Bouillon and some Lawry's seasoning salt.
***Whole Pork Tenderloin*** 2.49/lb
I'll admit, I haven't tried this, but it's another idea I'm gonna float.
Teriyaki Sauce is on sale for 2.99 a bottle. Put your tenderloin in your crock pot, pour the entire bottle of Teriyaki Sauce over the top. Add a little water if you think it needs it and let the Teriyaki sauce infuse into the pork all day long. If Teriyaki is too sweet, add some Soy Sauce (also on sale for 2.49) Serve with Ben's Ready Rice 2 for $4 or grab a bag of the regular rice and cook that. We recently tried the basmati rice found at Hays and it's our new family favorite. It's not on sale, but more cost effective for a larger group than the Ben's Ready Rice. If you're cooking for just one or two people, Ben's is the way to go.
I hope this gives you some ideas for meals this week. I'll be making a couple of them myself. Leave me some baby back ribs please. :)
Let me know if I should keep doing this. It does take time, but if it helps families stretch their budget, avoid Taco Bell, and support our local small grocery store, I'll keep doing it.
