Happy Friday eve!

I only have three ideas this week. The ad was mostly geared toward Easter.

If you are hosting: Ham dinner
If you aren't hosting: Grab the ham now while it's on sale, even if you wont eat it for a week or two. I usually cut mine in half and eat half now and the other half when I'm looking in the freezer for dinner.

Put them in the pantry and pull them out when you get the ham out of the freezer.

Good morning, I'm popping in quick to say I won't have a meal plan this week. I'm working out of town this week and am struggling putting a meal on my own table. Our family ate at a local restaurant last night due to this. However, while I was prepping my lunch for today, this happened, and I wanted to share.
Now, before you look at the price I paid for deli meat, let me share how affordable this is. 1.5 lbs of turkey lasts me a full week. Mix with bread slices or lettuce, this is an affordable, healthy lunch. Could I go to Taco Bell or McDonalds for the price I'm paying for this healthy lunch? Nope!
7 days of turkey is 2.85 per day. 2 heads of lettuce to mix with this is .57 per day. I eat this for lunch every single day for $3.42 per lunch.
No, Hays deli meat is not expensive.

Good morning and happy Tuesday!
I'm not running behind today! It's gonna be a good day.

One of my favorite times of year is March. Not only for Spring, but for Corned Beef!
It's time for a good ol' corned beef dinner, and leftover sandwiches, and a weekend breakfast. I usually cook 2 corned beef roasts in the crock pot so we have enough for leftovers. It can be a little expensive getting two roasts, but the leftover possibilities of making it stretch into several meals, it's an amazing cut of beef.

***Corned beef is 5.98/lb and the points cut is 6.28/lb
Cabbage is on sale for .48/ lb. If cabbage isn't your thing, grab a bag of Boars Head sauerkraut. Red potatoes are on sale for 2 for $5/bag. The red potatoes really make the meal come together.

Good morning and happy Wednesday. I would have been here yesterday, but my cat was sitting on the sale ad. 😸

I have a few new ideas this week, so hopefully something will look good to someone. I tend to get bored serving the same ol' things, so it's fun to try something new.

*** Mexican food - choose your choice of tortillas, taco shells, or tostada shells.

Fresh avocado - .95 with digital coupon (limit 6)
Daisy Sour Cream 4 for $5

Any other fresh veggies you like in your meal.
For seasoning, have you tried the Hays brand taco seasoning in the jar? It's great. My husband is a purist when it comes to taco seasoning, but this one met his approval. It lasts forever and is always on hand when you forget to buy the packets of seasoning. Plus, it's more affordable in the long run versus the packets.

*** Brats!
The City Star Brats are awesome. They're not on sale this week, but the fresh buns are on sale 2.99 for a 6 count

*** Tuna Boats!
A winter twist on the classic sandwich. Mix the tuna with relish, mayo, hard boiled eggs and sprinkle in some shredded cheddar cheese. Take those brat buns that are on sale for 2.99 and cut out the top to create a boat. Any sort of fresh roll will work. The Kaiser buns are my favorite or just fresh rolls. Press down on the boat to give you more room for filling. Scoop in your tuna mixture, sprinkle some extra shredded cheddar cheese on top and bake for 20-30 minutes at 325 - 350. I served this a few days ago and regretted not making more for leftovers.

Good morning and happy Tuesday.

Yes, it's been awhile since I've posted. I wasn't sure anyone was reading the posts or if they were making an impact, so I took some time off. Plus, the holidays were bonkers and I had to prioritize. I'm still unsure if I'll do this every single week, but for now, here are some meal planning ideas based on what's on sale at Hays Market in Johnstown and Berthoud this week. The sale starts today and ends next Monday.

***Baby Back Pork Ribs*** $2.99/lb
slow cook in the oven all day (if you're home of course). Serve with Lamb Weston frozen potatoes, onion rings or fries $4.49/bag and fresh sugar or snap peas 2.99 for 8 oz.

***Chili***
Pork Chili meat is on sale for 2.79 or ground beef is always there too. I prefer mixing the two. Carroll Shelby's Chili Kit is 2.89 or grab some canned beans, (there are a few on sale this week) and a packet of seasoning. Grab a couple of fresh Roma tomatoes .99/lb to mix in or sprinkle on the top. If you like cheese, there are some shredded options at the back of the store. The only one on sale this week is a 2lb bag, so if you're going to use all of that, grab the Crystal Farms brand and save $5 by using your digital coupon.

***Center Cut Pork chops*** 2.19/lb
Shake & Bake or the Best Choice brand breading isn't on sale, but always affordable.
Serve with Fresh Zucchini or yellow squash 1.59/lb

***Roast Potatoes and Carrots in the crock pot***
Boneless top round roast 3.98/lb
2 lb fresh carrots 2 for $3
Little Potato Co potatoes 2 bags for $3.
I've tried all kinds of seasonings for this, but the easiest one is to just let it slow cook all day long in Better than Bouillon and some Lawry's seasoning salt.

***Whole Pork Tenderloin*** 2.49/lb
I'll admit, I haven't tried this, but it's another idea I'm gonna float.
Teriyaki Sauce is on sale for 2.99 a bottle. Put your tenderloin in your crock pot, pour the entire bottle of Teriyaki Sauce over the top. Add a little water if you think it needs it and let the Teriyaki sauce infuse into the pork all day long. If Teriyaki is too sweet, add some Soy Sauce (also on sale for 2.49) Serve with Ben's Ready Rice 2 for $4 or grab a bag of the regular rice and cook that. We recently tried the basmati rice found at Hays and it's our new family favorite. It's not on sale, but more cost effective for a larger group than the Ben's Ready Rice. If you're cooking for just one or two people, Ben's is the way to go.

I hope this gives you some ideas for meals this week. I'll be making a couple of them myself. Leave me some baby back ribs please. :)
