Local garlic is here, and honestly, this stuff always gets people talking. Our friends at Stone Soup Garden, grown right outside Laurel, dropped off three varieties, and they're out now.
You'll spot Chesnok right away by the red and purple stripes on the cloves. Raw, it's clean and balanced, but cook it down and something happens: it turns earthy, creamy, almost sweet. Roast it whole or melt it into a sauce and you'll see what we mean.
Chefs tend to reach for Music first, and there's a reason for that. Big cloves, true garlic flavor, medium heat. No surprises, just garlic doing exactly what garlic should.
Then there's Romanian Red. The cloves run smaller, which throws people off, but don't be fooled, this one has real bite. If you like your garlic a little loud, start here.
Stone Soup Garden (StoneSoupGardenMT) is at Carter's Thursday Pop-Up Market tonight from 4:30 to 7, and back Saturday for the Farmers Market from 8 to noon. Stop by, say hi, and pick up a head or two while it's still fresh off the ground.
