🥩🥔 Slow Cooker Garlic Butter Beef & Potatoes
Ingredients
2 lbs beef chuck roast, cut into large cubes
1½ lbs baby potatoes
4 tbsp unsalted butter, sliced
1 cup beef broth
½ cup sour cream
1 tbsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp dried parsley
1 tsp salt
½ tsp black pepper
2 tbsp fresh parsley, chopped
Instructions
Place the baby potatoes in the bottom of a slow cooker.
Arrange the beef cubes over the potatoes.
Season the beef with garlic powder, onion powder, paprika, dried parsley, salt, and black pepper.
Pour the beef broth around the beef and potatoes.
Place the butter slices evenly over the top of the beef.
Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until the beef is tender and easily shreds with a fork.
Stir the sour cream into the cooking liquid during the last 20 minutes of cooking until the sauce is smooth and creamy.
Sprinkle with fresh chopped parsley before serving.
Serve the beef and potatoes with plenty of the garlic butter gravy spooned over the top.
