Ingredients:
2 medium carrots (peeled and sliced)
1 egg (room temperature)
150 ml vegetable oil
1 tbsp lemon juice or vinegar
1 small clove garlic (optional)
Salt to taste
Instructions:
Boil the carrots until very soft, then drain and let cool slightly.
Add carrots, egg, lemon juice, garlic, and salt to a blender.
Blend while slowly pouring in the oil in a thin stream.
Continue blending until smooth and creamy.
