NO-BAKE LEMON CHEESECAKE 🍋☀️❄️
For the Crust:
1 ½ cups graham cracker crumbs (or digestive biscuits)
¼ cup melted unsalted butter
2 tbsp sugar (optional)
For the Cheesecake Filling:
2 cups cream cheese (softened)
1 cup sweetened condensed milk
⅓ cup freshly squeezed lemon juice
1 tbsp lemon zest
1 tsp vanilla extract
For Garnish (optional):
Whipped cream
Lemon slices
Mint leaves

INSTRUCTIONS:
1. Make the crust:
Mix graham crumbs, melted butter, and sugar until evenly combined.
Press into the bottom of a lined 9-inch springform pan or a rectangle mold.
Chill in the fridge for 30 minutes.
2. Prepare the filling:
In a mixing bowl, beat the cream cheese until smooth and creamy.
Add the condensed milk, lemon juice, lemon zest, and vanilla extract.
Beat until silky and smooth, scraping down sides as needed.
3. Assemble:

Red food coloring (gel preferred, use to achieve desired color)
For the Filling:
1/2 cup unsalted butter, softened
1/2 cup brown sugar
2 tbsp ground cinnamon
1/4 cup granulated sugar
For the Cream Cheese Icing:
4 oz cream cheese, softened
1/4 cup unsalted butter, softened
1 cup powdered sugar
1/2 tsp vanilla extract
1-2 tbsp milk (optional, to thin the icing)
Directions:
Prepare the Dough:

Ingredients:
3 cups granulated sugar
¾ cup (1½ sticks) unsalted butter
⅔ cup evaporated milk (or substitute with heavy cream)
12 oz white chocolate chips (or chopped white chocolate bars)
7 oz marshmallow fluff (about 1 jar)
3 teaspoons orange extract (or 1½ teaspoons orange zest for a natural alternative)
3 drops orange gel food coloring (optional; liquid can be substituted, use more as needed)
Instructions:
Prepare the Pan:
Line a 9x13-inch baking dish with parchment paper, leaving overhang on the sides for easy removal.
Cook the Base:
In a large saucepan over medium heat, combine sugar, butter, and evaporated milk. Stir constantly until the mixture comes to a boil.
Reach Soft-Ball Stage:
Continue cooking and stirring until the mixture reaches 234°F on a candy thermometer (this is known as the soft-ball stage). This typically takes about 5–7 minutes.
Add White Chocolate:
Remove the saucepan from heat. Immediately stir in white chocolate chips until fully melted and smooth.
