Chocolate Raspberry Mascarpone Cake 🎂🍫🍓
A rich chocolate cake layered with a creamy mascarpone-raspberry filling and topped with silky chocolate ganache.
Ingredients
• 2 cups all-purpose flour
• 2 cups granulated sugar
• ¾ cup unsweetened cocoa powder
• 1 ½ tsp baking powder
• 1 ½ tsp baking soda
• 1 tsp salt
• 1 cup buttermilk
• ½ cup vegetable oil
• 2 large eggs
• 2 tsp vanilla extract
• 1 cup boiling water
• 8 oz mascarpone cheese, softened
• 1 cup heavy cream
• ½ cup powdered sugar
• 1 tsp vanilla extract
• 1 ½ cups fresh raspberries, divided
• 8 oz semi-sweet chocolate, finely chopped
• 1 cup heavy cream
• 2 Tbsp unsalted butter
• Fresh raspberries (for garnish)
• Chocolate shavings (for garnish)
• Powdered sugar (for garnish)
Directions
1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, lining bottoms with parchment paper.
2. In a large bowl, whisk flour, sugar, cocoa, baking powder, baking soda, and salt.
3. In another bowl, whisk buttermilk, oil, eggs, and vanilla. Mix into dry ingredients until just combined.
4. Stir in boiling water until smooth. Divide batter between pans and bake 30–35 minutes, until a toothpick comes out clean. Cool 10 minutes, then transfer to wire racks.
5. Beat mascarpone until creamy. In another bowl, whip cream with powdered sugar and vanilla until stiff peaks form. Fold into mascarpone with 1 cup raspberries. Chill 30 minutes.
6. For ganache: heat cream until just simmering, pour over chocolate, and whisk until smooth. Stir in butter. Let cool until thickened.
7. Level cakes if needed. Place one layer on a plate, spread filling, top with second layer, and pour ganache over.
8. Garnish with raspberries, chocolate shavings, and powdered sugar. Chill 30 minutes before serving.
