Ultimate Garlic Butter Shrimp with Creamy Mashed Potatoes & Rainbow Veggies 🍤🥔🥦🌶️

Ingredients
🍤 For the Garlic Butter Shrimp
450 g large shrimp, peeled and deveined (about 20 shrimp, matching the photo)
2 tbsp unsalted butter
3 cloves garlic, minced
1 tbsp olive oil
½ tsp paprika
½ tsp Italian seasoning
½ tsp salt
¼ tsp black pepper
1 tbsp fresh parsley, chopped
🥔 For the Creamy Mashed Potatoes
800 g potatoes, peeled and cubed
60 ml warm milk
2 tbsp butter
½ tsp salt
¼ tsp black pepper
🥦🌶️ For the Sautéed Vegetables
2 cups broccoli florets
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 tbsp olive oil
½ tsp garlic powder
¼ tsp salt
¼ tsp black pepper
🌿 Garnish
Fresh parsley
Extra cracked black pepper
Instructions
1. Cook the Potatoes
Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15–18 minutes until fork-tender.
2. Make the Mashed Potatoes
Drain the potatoes and return them to the pot. Add butter, warm milk, salt, and pepper. Mash until smooth and creamy. Cover to keep warm.
3. Prepare the Vegetables
Heat olive oil in a skillet over medium-high heat. Add broccoli and bell peppers.
4. Sauté Until Tender-Crisp
Cook for 5–7 minutes, stirring occasionally. Season with garlic powder, salt, and pepper. Remove from heat.
5. Season the Shrimp
Pat the shrimp dry and toss with paprika, Italian seasoning, salt, and black pepper.
6. Cook the Shrimp
Heat olive oil and butter in a large skillet over medium-high heat. Add garlic and cook for 30 seconds until fragrant.
7. Finish the Garlic Butter Shrimp
Add the shrimp and cook for 1½–2 minutes per side, until pink and opaque. Stir in parsley and remove from heat immediately.
8. Assemble & Serve
Spoon the mashed potatoes onto plates. Add the sautéed vegetables and garlic butter shrimp. Finish with cracked black pepper and fresh parsley.
Notes & Variations
Add a squeeze of lemon juice over the shrimp before serving.
Sweet potatoes can replace regular potatoes.
Parmesan cheese can be mixed into the mashed potatoes for extra richness.
For added spice, include a pinch of red pepper flakes.
