My youngest daughter is having her first baby. She is due in a month. One of my gifts to her and her family, is cooking some food to freeze so she can have on hand for when the baby comes and she doesn’t feel like cooking.

I am thinking about making some carne adovada smothered burritos. And of course I would probably make my famous green chile queso. The queso is what I get the most compliments on.

I would make it maybe Friday the 4th?

Hey all! I apologize for not updating sooner.

I had my first radiation treatment and idk if it’s something I’ll want to continue doing.

I am going to call tomorrow and try to get in for an appointment and see what the radiation oncologist suggests.

Then, if all goes well, I’ll continue treatment and start over 😉

Update: All original casserole spots are officially filled — thank you guys so much!! I will be delivering tomorrow between 11am and 1pm.

I’ve had a few more people reach out, so I’m opening up 2–3 extra spots before I go shopping today.

If you’ve been thinking about it, now’s the time — once these are gone, that’s it for this round.

I’ve had several people ask me to make stacked enchiladas, so I decided to go ahead and do them this round!

Feeds 4–6 people

(Only 3 casseroles available) I would like to keep it at three, but if I get more than three, I might be willing to add more. It will just depend on how many I get. I want to make sure that I can make them all and deliver them all on time.

Gross, 10/10 don’t recommend… I am a pretty decent cook, so I can usually save the day with seasonings, and there was no saving this…
