​Potatoes: Large Russets, sliced into 1-inch thick rounds.
​Oil: Olive oil or melted butter.
​Seasoning: Salt, pepper, and garlic powder.
​Toppings: Shredded cheddar cheese and crispy bacon bits.
​Instructions:
​Prep: Preheat your griddle (or oven) to 400°F (200°C).
​Season: Coat potato slices with oil and seasonings on both sides.

🍗 Creamy Garlic Chicken with Roasted Potatoes & Cherry Tomatoes 🥔🍅

🛒 Ingredients
🍗 For the Chicken:
3 chicken breasts, sliced 🍗
1 tbsp olive oil 🫒
2 cloves garlic, minced 🧄
Salt & black pepper
1 tsp paprika
🥔 For the Potatoes:
700 g baby potatoes, halved 🥔
2 tbsp olive oil 🫒
Salt & pepper
2 tbsp fresh parsley, chopped 🌿
🍅 Extras:
6 cherry tomatoes 🍅
🥛 Creamy Garlic Sauce:
1 cup heavy cream 🥛
½ cup chicken broth
2 cloves garlic, minced 🧄
½ cup grated Parmesan cheese 🧀
1 tsp dried herbs (thyme or Italian mix)
Salt & pepper
👨‍🍳 Instructions
Preheat oven to 200°C (400°F). Toss halved potatoes with olive oil, salt, and pepper, then spread on a baking tray. Roast for 30–35 minutes until golden and crispy.
While potatoes cook, heat olive oil in a pan over medium heat. Season chicken with salt, pepper, and paprika, then sear for 5–6 minutes per side until golden and cooked through. Remove and set aside.
In the same pan, sauté garlic for 30 seconds until fragrant. Add chicken broth and cream, then stir in Parmesan and herbs. Simmer for 3–5 minutes until slightly thickened.
Return the chicken to the pan and coat with the creamy sauce. Let it simmer for 2–3 minutes.
Add cherry tomatoes to the roasting tray during the last 10 minutes of cooking so they soften and blister slightly.
Slice the chicken and arrange on a tray with roasted potatoes and tomatoes. Spoon the creamy garlic sauce generously over the chicken.
Sprinkle fresh parsley on top and serve warm.

🍗 Rich Brown Roasted Chicken
Ingredients
4 chicken thighs or leg quarters
2 tbsp olive oil or melted butter
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
½ tsp smoked paprika
½ tsp thyme
½ tsp black pepper
1 tsp salt
Instructions
Preheat oven to 400°F (200°C).
Pat chicken dry and rub with olive oil.
Mix all seasonings and coat chicken evenly.
Place on a baking sheet or skillet.
Roast 35–45 minutes until skin is deep brown and internal temp reaches 165°F.

Ingredients
2 cups elbow macaroni
2 tbsp butter
2 tbsp flour
2 cups milk
2 cups sharp cheddar cheese (shredded)

Instructions
Cook macaroni and drain.
In saucepan melt butter, whisk in flour and cook 1 minute.
Slowly whisk in milk until smooth and thick.
Stir in cheese until melted.
Mix with pasta, pour into baking dish.
Bake 20 minutes at 375°F until bubbly and golden.
🫛 Simple Butter Peas
Ingredients
2 cups green peas
1 tbsp butter
Pinch salt & pepper
Instructions
Heat peas in a small pan with butter.
Season lightly and cook 3–4 minutes.
🌽 Golden Cornbread
Ingredients
1 cup cornmeal
1 cup flour
¼ cup sugar
1 tbsp baking powder
1 cup milk
2 eggs
¼ cup melted butter
Instructions
Preheat oven 375°F.
Mix dry ingredients in bowl.
Whisk milk, eggs, and butter separately.
Combine and pour into greased pan.
Bake 20–25 minutes until golden.

TACO SPAGHETTI

Ingredients:

1 pound spaghetti noodles

2 pounds ground beef

½ yellow onion, diced

1 bell pepper, diced

2 tablespoons olive oil

1 packet taco seasoning

1 can (10 oz) diced tomatoes with green chilis (undrained)

1 cup sour cream

1 cup beef broth

2 cups shredded Mexican blend cheese

Directions:

Cook the Pasta:

Prepare spaghetti according to package instructions. Drain and set aside.

Sauté & Brown:

In a large skillet, heat olive oil over medium-high heat. Add diced onion and bell pepper. Sauté for 3–4 minutes until soft. Add ground beef and cook until browned. Drain any excess fat.

Make it Saucy:

Return the beef mixture to the skillet. Add taco seasoning, canned tomatoes with green chilis (including juice), beef broth, sour cream, and shredded cheese. Stir well and let it simmer on low heat, stirring occasionally, until the sauce is creamy and cheese is melted.

Combine:

Add the cooked spaghetti into the skillet. Toss well to coat the noodles evenly with the taco sauce.

Serve:

Serve hot. Optional: garnish with chopped cilantro or a sprinkle of extra cheese.

Preparation time: 5 minutes

Cooking time: 25 minutes
