Salted Caramel Pretzel Cheesecake
Ingredients:
For the Pretzel Crust:
2 cups crushed pretzels
½ cup unsalted butter, melted
¼ cup granulated sugar
For the Cheesecake Filling:
4 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
4 large eggs
1 cup sour cream
½ cup heavy cream
For the Salted Caramel Sauce:
1 cup granulated sugar
6 tbsp unsalted butter
½ cup heavy cream
1 tsp sea salt (plus more for garnish)
🍳 Preparation Steps:
Prepare the Pretzel Crust:
Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
In a bowl, mix together crushed pretzels, melted butter, and granulated sugar until combined.
Press the mixture firmly into the bottom of the prepared pan. Bake for 8-10 minutes until set. Remove from the oven and let it cool.
Make the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
Gradually add in granulated sugar and vanilla extract, mixing until combined.
Add the eggs, one at a time, mixing on low speed until just incorporated.
Stir in the sour cream and heavy cream until smooth and creamy.
Assemble the Cheesecake:
Pour the cheesecake filling over the cooled pretzel crust, smoothing the top with a spatula.
Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour to prevent cracks.
Prepare the Salted Caramel Sauce:
In a saucepan over medium heat, melt the sugar, stirring constantly until it turns a golden amber color.
Remove from heat and carefully stir in the butter until melted. Slowly add in the heavy cream, stirring until smooth.
Stir in the sea salt and let it cool slightly.
Chill and Serve:
Once the cheesecake is cool, refrigerate for at least 4 hours or overnight to set.
Before serving, drizzle the cooled salted caramel sauce over the top of the cheesecake. Garnish with additional sea salt if desired.
Carefully remove the sides of the springform pan, slice, and enjoy!
