Yeast Rolls
What you need:
1 cup warm water
1/4 cup sugar
1 package instant dry yeast
3 1/4 cup all purpose flour
1/2 teaspoon salt
1/4 cup vegetable oil
1 egg
Stand mixer with dough hook
Large baking sheet
Cooking spray or butter to grease pan
Butter to coat finished rolls
The oven with just its light turned on provides the perfect place for your rolls to rise! As soon before you begin as possible, turn on your oven light and adjust your oven racks if necessary to accommodate your mixer’s mixing bowl.
Combine the warm water, sugar, and yeast in your mixer’s bowl. Allow to sit for 10 minutes for the yeast to “bloom.”
Combine 1 cup of your flour and the salt and add. Mix for 2 minutes.
Combine the oil and egg and add. Mix for 2 minutes.
Slowly add the remaining 2 1/4 cups of flour and mix well.
Remove the bowl of dough from your mixer. Cover it with a dish cloth and allow it to rise (in the oven with the light on, or in another warm area, until doubled—about 45 minutes .
Scoop the dough onto a floured countertop and knead and turn it until it’s smooth. It may be just a little sticky and thats ok. If it sticks to your hands too muchh, add tiny sprinkles of flour until it’s manageable.
Divide your dough (use a blunt knife or dough cutter) until you end up with 16 rolls. Roll the individual rolls between your palms or between your cupped hand and the countertop until smooth, and place on a greased baking sheet. Flatten them just a little, remembering they will rise and spread.
Cover with a cloth and allow to rise (in oven with light on, or in another warm spot) for one hour. Remove before you preheat
the oven.
Preheat your oven to 350 now, and bake the rolls for about 20 minutes or until lightly browned . Remove from oven and brush generously with melted butter.
If you like your rolls to be tall, place them close together on the pan.
This recipe doubles very easily, and will still fit in a stand mixer’s bowl.
