Ingredients
200g beef
1 block of butter
2 cloves garlic
Fresh thyme and rosemary
Mashed potatoes:
5-6 potatoes (800g)
1 tbsp butter
100ml cream (1 teaspoon)
Ground nutmeg
Salt
Garnish:
300g green asparagus
Olive oil
1 clove garlic
1 tsp brown sugar
Salt
Meat sauce:
1 tbsp flour
1 cup beef broth
1/2 teaspoon cream
Black salt and pepper
Preparation:
Cut the potatoes into small pieces and boil in salted water until cooked through. Drain and mash into mashed potatoes. Pour the mashed potatoes into another saucepan, add butter and cream, and simmer over low heat, stirring constantly until smooth. Finally, add nutmeg and salt.
Pour olive oil into a saucepan, add asparagus, garlic, and brown sugar, and sauté for a few minutes. Then season with salt and set aside.
Remove the beef from the refrigerator and marinate with salt, black pepper, and a little oil. Let it sit at room temperature for 30 minutes. Then, sear the beef in a preheated skillet until golden brown on both sides. Add butter, garlic, and fresh herbs. Sear for 3-4 minutes per side.
📌 The internal temperature of a medium-rare steak should be approximately 60°C.
Once the steak is seared, add flour to the same skillet and stir-fry. Then add beef broth and cook, stirring constantly. Finally, add cream, salt, and pepper, and turn off the heat.
