No-Bake Peanut Butter Oat Cups
Chewy, chocolatey, and naturally sweetened, these no-bake peanut butter oat cups are the perfect quick snack or healthy dessert — made with just a handful of wholesome ingredients.

Ingredients:
1 1/2 cups rolled oats
1/2 cup peanut butter (natural, unsweetened)
1/4 cup maple syrup or honey
1/4 teaspoon salt
1/2 teaspoon pure vanilla extract
1/2 cup dark chocolate chips or chopped dark chocolate
1 teaspoon coconut oil (optional, for smoother chocolate topping)
Directions:
Line a 12-cup muffin tin with paper liners or use a silicone muffin tray.
In a large mixing bowl, combine rolled oats, peanut butter, maple syrup, salt, and vanilla extract. Stir until a sticky dough forms.
Divide the oat mixture evenly among the muffin cups, pressing it down firmly into the base of each cup.
In a microwave-safe bowl or using a double boiler, melt the chocolate chips with the coconut oil until smooth.
Spoon the melted chocolate evenly over each oat cup, smoothing out the tops with the back of a spoon.
Place the tray in the refrigerator for 20–30 minutes, or until the cups have set.
Once firm, remove from the tray and store in an airtight container in the fridge for up to a week, or freeze for longer storage.
