This Sunday morning Quiche was a fast easy dish and great for a rainy Monday morning leftover 🌧️

Preheat oven to 375. °
Precook bacon on the oven on a baking sheet. About 20 minutes.

1 10"premade pie crust
6 eggs
Four slices of cooked bacon chopped
3 diced green onions
1/4 red bell pepper chopped
Quarter cup of fresh gruyere 🧀

To Taste:
Celery Salt
Pepper
Dill
Garlic
Cayenne pepper

Bake for approximately 30 minutes or until firm all the way through. Let stand for 5 minutes before serving.

Sauce.
Two large tablespoons of sour cream
Two large tablespoons of hatch green chili sauce
Salt pepper to taste
A dash of cumin & Cayenne pepper.
Mix well.

Cold Weather Meals 🌧️❄️ Delicious, warming and inexpensive.
My favorite comfort food. Hamhock and beans. It brings back memories of home and my mother on cold rainy days.

Recipe 🌧️
One bag of pinto beans. rinsed and drained.
two smoked ham hocks.
Three to four slices of salt pork
salt and pepper to taste.
two cloves of garlic chopped
fresh sage
dash of cayenne pepper
A tablespoon of olive oil.
This dish requires a lot of salt. But don't try to salt it all at once. salt lightly at the beginning. taste through at various times in the cooking process to determine if you need more salt. It can be added at the end if needed. Cook time is 1 and 1/2 to 3 hours depending on the dryness of your beans, if they have been pre-soaked or your altitude.

I serve this with fried potatoes, fresh, diced red onion and warm cornbread.
