🍀 Guinness Butter Corned Beef & Cabbage
Ingredients
• 1 corned beef brisket + seasoning packet
• 1 bottle Guinness beer
• 3 tbsp butter (divided)
• 1 tbsp olive oil
• 1 lb yellow mini potatoes
• About 5 carrots, cut into chunks
• 1 small head cabbage, cut into wedges
Vegetable Seasonings
• Garlic powder
• Onion powder
• Black pepper
• Paprika
• Tony’s Creole seasoning
Directions
1️⃣ Place corned beef in a large pot or Dutch oven. Add seasoning packet, Guinness, and enough water to cover the meat.
2️⃣ Add 2 tbsp butter, bring to a boil, then reduce heat, cover, and simmer 2½–3 hours until tender.
3️⃣ Add potatoes and carrots. Cook 15 minutes.
4️⃣ Add cabbage and cook 10–15 more minutes until vegetables are tender.
5️⃣ Remove corned beef and let rest, then slice against the grain.
6️⃣ Toss vegetables with 1 tbsp butter, olive oil, and seasonings.
7️⃣ Serve corned beef with potatoes, carrots, and cabbage.
