This Blueberry Cottage Cheese Breakfast Bake is light, fluffy, and naturally sweetened! 🍓💛 A wholesome breakfast that keeps you full and satisfied!
Blueberry Cottage Cheese Breakfast Bake
Ingredients:
1 cup cottage cheese
½ cup Greek yogurt
3 large eggs
¼ cup honey or maple syrup
1 tsp vanilla extract
1 cup rolled oats
½ tsp baking powder
½ tsp cinnamon
¼ tsp salt
1 cup fresh or frozen blueberries
¼ cup chopped nuts (optional)
1 tbsp melted butter or coconut oil (for greasing)
Directions:
Preheat Oven & Prep Dish: Preheat oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish with melted butter or coconut oil.
Blend Wet Ingredients: In a blender or food processor, blend cottage cheese, Greek yogurt, eggs, honey, and vanilla until smooth.
Mix Dry Ingredients: In a large bowl, whisk together oats, baking powder, cinnamon, and salt.
Combine & Add Blueberries: Pour the blended mixture into the dry ingredients, stirring until combined. Gently fold in blueberries.
Bake: Pour the batter into the prepared dish. Sprinkle nuts on top if using. Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Cool & Serve: Let cool for 5-10 minutes before slicing. Serve warm with extra honey or fresh berries on top.
