Layer Cake with Boysenberry😍😋🍰

Ingredients:
For the Cake:

2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
2 teaspoons vanilla extract
1 1/4 cups whole milk
For the Boysenberry Filling:

2 cups fresh boysenberries (or thawed frozen berries)
1/2 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
For the Frosting:

2 cups heavy cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
Instructions:
Preheat the oven to 350°F (175°C). Grease and flour three 8-inch cake pans.

Make the Cake Batter:

In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, cream together butter and sugar until light and fluffy.
Beat in eggs one at a time, then stir in vanilla.
Gradually add the dry ingredients to the wet ingredients, alternating with milk. Begin and end with the dry ingredients.
Divide the batter evenly among the prepared pans and smooth the tops.
Bake the Cake:

Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Prepare the Boysenberry Filling:

In a saucepan, combine boysenberries, sugar, cornstarch, and lemon juice.
Cook over medium heat until the mixture thickens, stirring constantly. Remove from heat and let it cool.
Make the Frosting:

In a chilled bowl, whip the heavy cream until it begins to thicken.
Add powdered sugar and vanilla extract. Continue whipping until stiff peaks form.
Assemble the Cake:

Place one cake layer on a serving plate. Spread a layer of boysenberry filling on top.
Add the second cake layer and repeat the filling. Top with the third cake layer.
Frost the entire cake with the whipped cream frosting.
Optional: Garnish with fresh boysenberries on top.

Chill the cake for at least 2 hours before serving.

Cheesecake with Chocolate and Mascarpone

🟣IINGREDIENTS🟣
- 200g of cookies (Digestive type)
- 100g melted butter
- 300g mascarpone cheese
- 200g dark chocolate
- 100g icing sugar
- 300ml whipping cream
- 2 tablespoons of cocoa powder
- Fresh fruits to decorate (optional)

🟣INSTRUSIONS🟣

1. **Prepare the Base:**
to. Crush the cookies until you obtain fine crumbs.
b. Mix the cookie crumbs with the melted butter.
c. Press the mixture into the bottom of a springform pan to form the tart base. Refrigerate while you prepare the filling.

2. **Prepare the Filling:**
to. Melt the dark chocolate in the microwave or in a bain-marie and let it cool slightly.
b. In a large bowl, mix the mascarpone cheese with the powdered sugar until you obtain a smooth mixture without lumps.
c. Add the melted chocolate to the bowl and mix well.
d. In another bowl, whip the cream until firm.
and. Add the whipped cream to the chocolate and mascarpone mixture, mixing gently so as not to lose air.

3. **Assemble the Cake:**
to. Pour the mixture over the cookie base in the mold.
b. Smooth the surface with a spatula and refrigerate the cake for at least 4 hours, or until firm.

4. **Decorate and Serve:**
to. Before serving, sprinkle the surface of the cake with cocoa powder.
b. If you wish, decorate with fresh fruits.
c. Carefully unmold the cake and enjoy this delicious dessert!
