1 lb boneless, skinless chicken breasts
Salt and pepper to taste
1 tsp Italian seasoning
2 tbsp olive oil

For the Alfredo sauce:
4 tbsp butter
3 cloves garlic, minced
1 1/2 cups heavy cream
1 cup freshly grated Parmesan cheese
Salt and pepper to taste
1 tsp Italian herbs (optional)

For the pasta:
1 lb fettuccine pasta
1 tbsp salt (for boiling water)

For garnish:
Fresh parsley, chopped

📝 Instructions:

1️⃣ Prepare the Chicken:
Season the chicken breasts with salt, pepper, and Italian seasoning.
Heat olive oil in a skillet over medium heat. Cook the chicken for 6-7 minutes on each side, or until golden brown and the internal temperature reaches 165°F.

**For Idli:**
- 2 cups rice (idli or regular)
- 1 cup urad dal (split black gram)
- 1 tsp fenugreek seeds (optional)
- Water (for grinding)
- Salt to taste

**For Sambar:**
- 1 cup toor dal (pigeon peas)
- 1½ cups mixed vegetables (carrot, beans, potato, etc.)
- 1-2 tbsp tamarind pulp
- 2 tbsp sambar powder
- ½ tsp mustard seeds
- Curry leaves
- 2-3 dry red chilies (optional)
- ½ tsp turmeric powder
- ½ tsp hing (asafoetida)
- Salt to taste
- 1 tbsp oil

**Steps:**

1. **Make Idli Batter:**
- Rinse rice & urad dal. Soak for 4-6 hrs or overnight.
- Grind separately into a smooth batter, adding water as needed.
- Mix, add salt, and ferment for 8-12 hrs.
- Steam in greased molds for 10-12 mins until done.

2. **Make Sambar:**
- Cook toor dal in a pressure cooker, mash.
- Cook mixed veggies with turmeric, salt & tamarind pulp.
- In a pan, heat oil, add mustard seeds, curry leaves, red chilies, hing, & sambar powder. Cook for 1 min.
