- Peanut or vegetable oil (for frying)

Directions:
1. In one bowl, whisk the eggs until smooth. In a second bowl, combine the flour, garlic powder, and a pinch of salt and pepper. Finally, place the panko in a third bowl.
2. Take each fish filet and dip it first into the eggs, then into the flour mixture, and finish with a generous coating of panko.
3. Heat oil in a frying pan over medium heat until hot and shimmering.
4. Fry the fish filets for about 3-4 minutes on each side, until they’re golden brown and cooked through.

Ingredients:
- 2 bulbs Garlic
- 1 tablespoon Olive oil
- Salt & pepper
- 3 tablespoons Butter
- 2 tablespoons Roasted garlic
- 1.5 cups Heavy cream
- 1 teaspoon Chicken powder
- Thyme & parsley (optional)
- 2 cups Shredded rotisserie chicken
- 3 large Flour tortillas
- 1 cup Shredded cheddar & mozzarella cheese

Directions:
1. Preheat your oven to 350°F (175°C). Cut the tops off the garlic bulbs to reveal those glorious cloves. Drizzle with olive oil and season with salt and pepper. Wrap them in foil or pop them into a mini cocotte and roast for about 30 minutes, or until they're tender and beautifully golden. Let them cool to room temperature.
2. Once cooled, squeeze out the roasted garlic cloves and give them a good mash. In a pan, melt the butter and add the mashed garlic, heavy cream, chicken powder, and herbs if you’re using them. Let it simmer for about 4-5 minutes until the mixture thickens slightly.
3. Season your creamy concoction with a pinch of salt and pepper, and then stir in the shredded chicken until it’s warmed through and nicely coated.
4. Take a tortilla and lay it flat. Spoon that deliciously creamy garlic chicken right in the center, then sprinkle a generous handful of shredded cheese on top.
5. Roll the tortilla tightly from the bottom up, making sure it’s snug and secure.
