Tuna crudo + peaches + pork belly + whiskey barrel aged soy + micro radish green salad

I dressed it with a vinaigrette I made with the pork fat from the belly

I wear a bracelet on a daily that reads “mise en place” & my 7y/o son Oliver has always admired it. When asked what he wanted for Christmas, he stated a bracelet but not any bracelet. He wanted matching bracelets that read “big chef” on one & “little chef” on the other. Thank you for making this little chef’s dream come true! Hands down my favorite gift I have ever given or received!
