A French 75, warmed with spiced pear. 🍐
Fresh green pears, cinnamon sticks, and star anise simmer down on the range into a rich, fragrant syrup—then get shaken with gin and fresh lemon and topped with ch*****ne. Keep a batch chilled for an effortless house cocktail, or swap in pear juice and sparkling water for an equally elegant mocktail.
Spiced Pear Syrup
- 4 green pears, chopped
- 2 cinnamon sticks
- 1 star anise pod
- 1¼ cups sugar
- 1 cup water
Simmer everything together over medium heat for about 25 minutes. Let cool to room temperature, strain into a lidded container, and refrigerate for up to 2 weeks.
Cocktail
- 1 oz gin
- ½ oz fresh lemon juice
- ½ oz spiced pear syrup
- Ch*****ne, to top
Mocktail
- 1 oz pear juice
- ½ oz fresh lemon juice
- ½ oz spiced pear syrup
- Sparkling water, to top
Add everything except the bubbles to a shaker with ice and shake until chilled. Strain into a coupe, top with a few ounces of ch*****ne or sparkling water, and garnish with a sprig of thyme or a star anise pod.
