Strawberry sourdough pancakes with fresh strawberry compote

Pancake recipe:
120g flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
120g sourdough starter
3/4 cup milk
1 egg
1 tbsp oil

Compote recipe:
Strawberries
Sugar

One pan breakfast tacos—cooking in the RV

Tips:
-to avoid having to rinse my pan multiple times, I toast my tortillas first before cooking the rest of my food
-next, I cook the meat first and make sure it’s cooked through before adding the rest of my ingredients

Sausage

Black beans
Tortillas
Cheese
Taco seasoning

And just like that, we’ve got more frozen hashbrowns for the week!

After shredding my potatoes, I rinse them in cold water 3-5 times and strain until the water runs clear to remove extra starch and to prevent them from becoming too mushy when thawing

A lot of frozen potato/hashbrown recipes recommend blanching before freezing—personally I’ve never found this to be necessary with shredded potatoes, especially since I typically use them within a week of freezing. I DO blanch my potatoes when they’re diced in thicker chucks, but the shredded potatoes are so thin that rinsing in cold water seems to be enough to prevent browning and to retain that crunchy texture once fried. Oddly enough, anytime I’ve tried blanching my shredded potatoes, they end up being TOO crispy once I fry them!

And let’s be honest, having to remove a million pieces of shredded potatoes from a pot of boiling water is a pain so we just skip that part 🤣

As someone who was born/raised and has lived in Ohio my entire life, spending more than a month in Florida last year nearly ruined orange juice for me 😅 I know that probably sounds dramatic but I’m not exaggerating lol!

The regular orange juice brands you can buy at the store up here just don’t compare to the orange juice you get in Florida, and it actually made me start to hate orange juice altogether 😭 That is until I discovered Uncle Matt's Organic orange juice!!

I don’t know what they put in this stuff, but the taste is far superior in my opinion—it reminds me of that ‘fresh squeezed’ taste! It’s a bit expensive compared to other brands, but for me personality it’s more than worth it because I think it tastes that much better!!

If you’re picky about orange juice like I am, I recommend giving this brand a try!

Easy Dinner Idea

Ingredients:
Chicken breast
Parmesean cheese
Rosemary
Thyme
Oregano
Garlic powder
Onion powder
Salt+pepper
Green beans
Sliced almonds
Butter
Oil

Instructions:
1. Mix spices together
2. Tenderize chicken and season both sides with spices
3. Heat oil in pan on medium heat, add chicken and cook 3-5 minutes on each side until browned
4. Transfer chicken to baking sheet and top with shredded parmesean cheese
5. Bake in oven at 400 for 8-12 minutes until cooked through
6. Add sliced almonds to airfryer and bake at 350 for 2-3 minutes until golden brown
6. Add green beans to pan on medium heat, coat with remaining oil
7. Add water to pan with green beans, cover and let steam for 5-7 minutes until tender
8. Turn off heat, add toasted almonds and butter to pan with green beans. Stir to combine and season with salt
9. Remove chicken from oven and transfer to plate with green beans

When they said you could cook a perfect pizza in under 5 minutes using the Ninja pizza oven, we thought it was too good to be true until we gave it a try!! We stopped ordering pizza altogether once we realized what this oven is capable of and now we make all of our pizza right here at home!
