This comes up constantly, and the answer really depends on what "durable" means to you. So let's break it down the way we'd explain it to a friend.
If you want zero maintenance and something that just handles everything β quartz is your best bet. It's engineered, non-porous, never needs sealing, and resists stains and scratches really well. The one trade-off is heat. Always use a trivet, because quartz doesn't love a hot pan sitting directly on it.
If you want natural stone with serious durability, quartzite is the one we can't stop talking about right now. It's harder than granite, looks stunning, and handles heat better than quartz. It does need sealing every so often, but honestly it's low effort for what you get.
Granite is still a workhorse. Heat resistant, incredibly tough, and each slab is completely unique. It needs periodic sealing but it's one of the most proven materials out there for a busy kitchen.
