Quick Crispy Chicken Caesar Smash Tacos�
Ingredients
* 1 lb ground chicken
* 6–8 small flour tortillas
* Sergio’s Seasoning
* Table 40
* Pepper Mafia
* 1 cup panko breadcrumbs
* Fresh grated parm
* Olive oil
For the Caesar salad topping
* 1–1½ cups chopped romaine lettuce
* ½ cup grated parmesan
* ⅓ cup Caesar dressing
* Crushed croutons (optional but great for extra crunch)
* lemon wedge

Instructions
1. Season the chicken�In a bowl mix ground chicken with 2 tsp Sergio’s Seasoning.
2. Smash onto tortillas�Spread a thin layer (about 2–3 tablespoons) of the chicken mixture onto one side of each tortilla.
3. Add the panko crust
To a plate, add panko, 1 tbsp Tablespoon 40, 1 tbsp Sergio’s and some grated parm. Combine. Press the tortilla with chicken into the breadcrumbs so it sticks.
4. Cook the tacos�Heat a skillet over medium with a few tbsp of olive oil.�Place tortillas panko/chicken side down in the pan and cook about 3-4 minutes until golden and crispy.
5. Flip the tortilla�Flip and cook another minute so the tortilla crisps slightly.
6. Make the Caesar topping�Toss chopped romaine with Caesar dressing and 1 tsp of Pepper Mafia.
7. Assemble�Top each crispy taco with the Caesar salad mixture, extra parmesan. Optional to add crushed croutons. And a squeeze of lemon. Enjoy!

Loaded twice baked potatoes

Apricot–Pepper Cream Cheese Spread

Keep these simple ingredients on hand during the holidays for when company stops by. It’s sweet, a little spicy and the perfect quick app in a pinch.

Ingredients
* 1 block (8 oz) cream cheese, softened/room temp
* ⅓–½ cup apricot jam or preserves
* Pepper Mafia (about ½–1 tsp, to taste)
* Butter crackers (other options below)
* Herbs for garnish (optional)

Instructions
1. Prepare the base:
Place the softened cream cheese on a serving plate. You can leave it as-is or shape to your liking.
2. Make the topping:
Warm the apricot jam or preserves slightly (microwave 10–15 seconds) so it becomes pourable. Stir in the Pepper Mafia blend.
3. Assemble:
Spoon or drizzle the peppered apricot mixture over the cream cheese.
4. Garnish:
Add extra black pepper on top, plus herbs or nuts if using.
5. Serve with:
* Crackers
* Crostini
* Pita chips
* Pretzel crisps

Chicken Pot Pie🥧

Went festive with this one for Halloween🎃, but totally interchangeable for each season. Can be baked in individual oven-safe bowls or in a large cast iron pan.

2 breasts of chicken (I used rotisserie)
2 puff pastry sheets
3 tbsp unsalted butter
2 carrots, chopped
1 onion, finely chopped
2 stalks celery, finely chopped
2 medium yellow potatoes, diced up
1 cup frozen peas
3 cloves garlic, minced
Salt, pepper, onion powder, garlic powder, paprika, thyme to taste
3 tbsp all-purpose flour
1- 2 tbsp better than bouillon
2 chips chicken broth
1/2 cup milk
3/4 heavy cream
Parm rind if you have
Bay leaf
1 egg and 1 tsp water for basting the top of the pie

Thaw puffy pastry. Set oven to 400. In a Dutch oven or heavy bottom pot add butter, onion, carrot and celery. Add a little salt and sauté until onion is translucent.

Add potato, garlic and seasonings of choice. Stir to combine. Add bouillon and coat ingredients well. Add flour and combine again.

Add chicken broth, milk, heavy cream, parm rind (if using), bay leaf and combine. Bring to boil then reduce to a simmer and cook about 10 minutes until it begins to thicken. Add chicken and peas and combine well. Taste for salt. Take off heat. Remove the rind and bay leaf.

In individual bowls or a 10” cast iron pan, layer a little butter around the base. Add your first layer of puff pastry. Add in the mix. For the top layer, roll the pastry out a little bit to make it thinner and larger to better cover the top. Trim excess hanging off.

Make your egg yolk wash and use a pastry brush to brush all over. Cut a few slits on the top then bake for about 20-25 minutes or until everything is golden and crispy. Let sit a bit before serving, it’ll be hot!

SALAD:
Iceberg lettuce cut into wedges

Grilled corn, or charred on your stovetop burner. When cooled, slice down the cob, trying to keep some larger pieces intact for playing.

Cherry tomatoes (I love the sugar bombs).

Bacon, topped with brown sugar baked on a baking sheet at 400 for about 20-25 min. When cooled give them a rough chop.

Fresh chopped chives.

Any dressing of choice, obviously a homemade blue cheese is top choice.

Blue cheese crumbles cut fresh off the block.

If you’re feeling adventurous, fry some crispy shallots too.
