Cajun Corn Chowder with Shrimp and Chicken
Serves ~ 8
2.5 - 3 # boneless skinless chicken thighs
2 # shrimp, peeled, Gulf shrimp is best
1 # andouille sausage, diced
4-6 ears of corn
3 cans sweet corn, 1 drained
4 Tbsp softened butter
1 yellow onion, diced
1 red bell, diced
1 green bell, diced
1 Tbsp garlic, minced
Bayou Red Cajun Seasoning
Gulf Coast Seafood Seasoning
Roasted Garlic Butter Seasoning
1 Tbsp sugar
1/4 cup flour
4 cups low sodium chicken broth
2 Tbsp worcestershire
2 Tbsp Crystal hot sauce
2.5 cups heavy cream
2 bunches green onion, diced
Season chicken thighs with Bayou Red cajun seasoning. Season the fresh corn with Bayou Red, Gulf Coast, and Roasted Garlic Butter Seasoning, and 2 Tbsp softened butter. Roast both at 450 until chicken is fully cooked and corn has good color (see picture). While chicken and corn are cooking, heat pot over medium heat and add diced andouille. Cook until some fat has rendered out. Increase heat to medium high and add 2 Tbsp butter, onion, bell peppers, garlic, and 1 bunch of green onions. Add 1 Tbsp each of the three seasonings. Cook until softened and you get a little color on the veggies. Reduce heat to medium low and add flour. Mix well and cook for a few minutes. Slowly stir in chicken broth a cup at a time. Add worcestershire and hot sauce. Bring to simmer. Dice chicken and add to pot. Cut corn off of the cobs and add kernels and cobbs to the pot. Using a blender or food processor, puree the canned corn until smooth and add to the pot. Add 1 Tbsp sugar. Simmer on low, covered, stirring occasionally, for 30 minutes to 1 hour. Meanwhile, season shrimp with Gulf Coast Seafood Seasoning and Roasted Garlic Butter Seasoning and roast or broil in a hot oven until just done, 135 degrees. Set aside. After soup has simmered, remove cobbs add the heavy cream and return to simmer for 5 minutes. Add shrimp and any juices that are in the pan. Add remaining bunch of diced green onions. Turn off heat and mix well. Let sit for 5 minutes or so before serving. Shake a little Crystal hot sauce on top for a bit off added spice and acidity. Also really good with some garlic bread or a drop biscuit.
