One-Pan Bold Honey BBQ Beef Rice
Ingredients:
* 1 lb boneless, skinless beef thighs or breasts, diced into bite-sized cubes
* 1 cup long-grain rice
* 2 cups beef broth
* 1/2 cup honey
* 1/4 cup BBQ sauce
* 1 tablespoon olive oil
* 1 onion, diced
* 2 cloves garlic, minced
* 1 teaspoon smoked paprika
* 1/2 teaspoon salt
* 1/2 teaspoon pepper
* Chopped green onions for garnish
Instructions:
1. Heat olive oil in a large skillet over medium heat. Add the diced beef and season with salt, pepper, and smoked paprika. Cook until browned, about 5-6 minutes.
2. Add the onion and garlic, cooking until the onion becomes translucent.
3. Stir in the rice, beef broth, honey, and BBQ sauce. Bring to a boil.
4. Reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked and has absorbed most of the liquid.
5. Remove from heat and let it sit, covered, for 5 minutes.
6. Fluff the rice with a fork, garnish with chopped green onions, and serve warm.
