First time working with yesterday for Esom & Emmanuel’s wedding and everything just clicked. Communication, coordination, timing, energy…every team locked in and delivered.

Whilst briefing the team, we discovered the plated guest count increased by 50, which meant 5 additional tables were added beyond the original service plan.

Our team had to quickly regroup, reassign sections, and adjust service flow in real time.

In plated service, guest counts directly affect staffing, pacing, and timing. Even small changes can significantly impact the overall flow of service.

Proud of my team for remaining professional and adaptable under pressure 👏🏾

Nobody stayed in one place for long.
One minute it was shrimp kebabs. Next minute the puff puff trays disappeared. Then the suya cups started moving too fast 😂
