KUMQUAT NO-BAKE PIE: A refreshing citrusy twist of a pie to impress your friends.

Ingredients:
4 cups ripe kumquats whole
14 ounces sweetened condensed milk
⅓ cup lemon juice fresh
8 ounces frozen whipped topping, thawed
Optional topping: whipped topping and candy orange slices
1 graham cracker crust, store bought

Directions:
Half the kumquats and remove small seeds.
Put the seeded kumquats in a food processor, and puree until the mixture is relatively smooth.
Whisk together the pureed fruit, sweetened condensed milk, lemon juice, and the whipped topping in a medium-size bowl.
Pour the filling into the graham cracker crust and chill for two to three hours before serving.
Optional, garnish the pie with a dollop of whipped cream and sliced candy orange slices.

HAWAIIAN PEPPER PIZZA: Savory and sweet and melts in your mouth! Recipe ⬇️

Ingredients:
1 large orange bell pepper
1 large yellow bell pepper
1 large red bell pepper
1 large green bell pepper
8 oz mozzarella cheese, shredded
sliced Canadian bacon
8 oz canned pineapple slices
1 cup Parmesan cheese, grated / divided
1 tsp Italian seasoning
1/2 cup heavy cream
3 cloves garlic, minced
Salt and pepper

Preheat oven or air fryer to 400°

Cut the bell peppers in half and remove the ribs and seeds. Place pepper halves on baking sheet and bake for 20 minutes on middle rack.

While roasting, heat 1/2 cup of heavy cream and 1/2 cup of grated Parmesan, 3 garlic cloves minced with salt and pepper. Whisk into a sauce.

After 20 minutes roasting, Layer each pepper cup with mozzarella cheese, sauce, Canadian bacon and pineapple. Then top each pepper cup with any remaining mozzarella, and sprinkle the top with Parmesan cheese and Italian Seasoning.

Bake or air fry for another 10 minutes. Serve and enjoy!

EAT YOUR VEGGIES DAY: I traded pizza crust out and replaced it with bell pepper slices! These mini Hawaiian Pepper Pizza were a fun dinner!

KUMQUAT CHICKEN: Yes, you see that right! We are cooking with kumquats. I was pleasantly surprised with the end result. The sauce was a citrusy flavor like an orange chicken but even more tang to it. Check it out!

PRESSURE COOKER EGG ROLL IN A BOWL: super simple… I think I’m going to add more soy sauce, and other Asian sauces (like a hoisin) next time I make this.

Ingredients:
2 tbsp sesame oil
1/3 cup low-sodium soy sauce or tamari
1 lb ground chicken
4 cloves garlic minced
1 (8oz) package sh*ttake mushrooms, sliced
1 1/2 cups chicken broth
1 cup matchstick cut carrots
2 bags coleslaw mix
1 bunch green onions, sliced
2 tbsp sesame seeds
Sriracha, for topping

Directions:

Add sesame oil, soy sauce, ground chicken, garlic, mushrooms and chicken broth to pressure cooker in that order.

Cook on high pressure 2 minutes. It takes about 10 minutes to come to pressure and then the 2 minutes to cook.

When complete, press cancel and do a quick release of the steam.

Stir in matchstick carrots and coleslaw mix, stirring well to combine. Replace lid and let sit 5 minutes. Open lid and stir in green onions and sesame seeds then serve and enjoy!

CUCUMBER CRACK: This cucumber salad is addicting! It would be great for a potluck too. It’s simple: sliced cucumbers, shredded cheddar, sliced bacon, diced green onion, and ranch dressing. Let it sit at least a half hour in the fridge before enjoying!
