Pico De Gallo
"This is an old old recipe, My grandmother use to make this back in the late 40's early 50's , My Mom use to fix this when I was growing up in the 60's and 70's, I fix it for my family and now my Daughter makes it for her fiance. obviously it's a family favorite!"

Ingredients
1 cup finely chopped white onion (about 1 small onion)
1 medium jalapeño or serrano pepper, ribs and seeds removed, finely chopped (decrease or omit if sensitive to spice, or add another if you love heat)
¼ cup lime juice
¾ teaspoon fine sea salt, more to taste
1 ½ pounds ripe red tomatoes (about 8 small or 4 large), chopped
½ cup finely chopped fresh cilantro (about 1 bunch)
How To Make Pico De Gallo
In a medium serving bowl, combine the chopped onion, jalapeño, lime juice and salt. Let it marinate for about 5 minutes while you chop the tomatoes and cilantro.
Add the chopped tomatoes and cilantro to the bowl and stir to combine. Taste, and add more salt if the flavors don’t quite sing.
For the best flavor, let the mixture marinate for 15 minutes or several hours in the refrigerator. Serve as a dip, or with a slotted spoon or large serving fork to avoid transferring too much watery tomato juice with your pico. Pico de gallo keeps well in the refrigerator, covered, for up to 4 days.

Broccoli Rice Cheese and Chicken Casserole
Ingredients
2 Tablespoons butter
2 boneless skinless chicken breasts, or 2 cups diced rotisserie chicken
1 teaspoon Italian Seasoning
Salt/Pepper, to taste
2 1/2 cups chicken broth
1 Tablespoon olive oil
1 1/4 cups white long grain rice, uncooked
2 cups fresh broccoli florets, uncooked
10.5 oz. Condensed Cream of Chicken Soup
½ cup milk
½ cup sour cream
2 cups shredded cheddar cheese, separated
Optional Seasonings
1 teaspoon dried thyme
1/2 teaspoon garlic powder
Casserole Topping
1 cup Ritz crackers, crushed
2 Tablespoons melted butter
How To Make Broccoli Rice Cheese and Chicken Casserole
Preheat the oven to 350 degrees.
Cut chicken into bite-sized pieces and season with Italian seasoning and desired amount of salt and pepper.
Heat butter in a large pot over medium heat until melted. Add the chicken and cook until golden brown on all sides, about 5 minutes. Remove and set aside. Note: This step is not needed if using a cooked rotisserie chicken.
Add the chicken broth, olive oil, and rice to the pot and bring to a boil, then reduce heat to a simmer.
Cover tightly and cook for 7 minutes.
Add the broccoli (if using fresh) and replace the cover. Cook for 8 more minutes. Refrain from stirring.
Turn off the heat and remove the cover. Let the rice stand for 10 minutes, do not stir. Any rice on the bottom of the pot will release.
Add the cooked chicken, soup, milk, sour cream, optional seasonings, and half of the cheddar cheese.
Add to a lightly greased 9 x 13 casserole dish and top with remaining cheese.
Cover and bake for 15 minutes.

California Spaghetti Salad 😋😋
Ingredients
400-500 grams of spaghetti.
1½ cup. From the cherry tomatoes, I cut them in half.
1 diced cucumber.
2 cubes zucchini.
1 green pepper, diced.
1 red pepper, diced.
1 red onion, diced.
Could. Of sliced ​​black olives, it must be filtered before use.
For dresses, I used:
1 bottle of Italian sauce.
Half a cup of grated Parmesan cheese.
1 tablespoon of sesame seeds.
1 teaspoon paprika.
½¼ 1 teaspoon of celery seeds.
Half tsp garlic powder.
Directions
I cooked the noodles according to package instructions, then filtered and rinsed in cold water.
After that, the dices collected vegetables. Zucchini, cherry tomatoes, green and red peppers, red onions, cucumbers, and black olives in a large mixing bowl.
To get the sauce, I whisked Italian dressing, sesame seeds, grated parmesan cheese, paprika, celery seeds, and garlic powder in another mixing bowl.
To finish, I tossed the cooked pasta with chopped vegetables and olives, then poured the marinade over it and threw all the ingredients well.
I put the container in the refrigerator for at least 3 hours after covering it with plastic wrap.

Baked Chicken Tacos: Easier Than You Think
INGREDIENTS
1 tablespoon olive oil
1/2 pound cooked chicken shredded (I used cooked Rotisserie chicken)
1 ounce Taco Seasoning click for homemade recipe!
1/2 cup onion diced
1 can diced tomato 14.5 ounce, fully drained
1 can Chopped Green Chiles 4.5 ounce, fully drained
10 Stand and Stuff Taco Shells I used Old El Paso
8 ounces Refried Beans 1/2 can
2 cups Mexican Blend Cheese shredded
Toppings such as Old El Paso sliced Jalapenos, sour cream, salsa, chopped cilantro, shredded lettuce, or any of your favorite taco toppings!
INSTRUCTIONS
Preheat oven to 400F. Spray a 9x13 baking dish with nonstick spray.
Heat olive oil over medium heat in a medium skillet.
Add onion to skillet and cook for 2-3 minutes, or until the onion is translucent and fragrant.
Stir in the chicken, taco seasoning, tomatoes (FULLY DRAINED), and green chiles (FULLY DRAINED) *see note. Stir to combine fully. Reduce to simmer and allow to cook for 5-8 minutes.
Place the taco shells in the baking dish, standing up. I was able to fit 10 taco shells in the dish by adding 2 on each side.
Bake the taco shells for 5 minutes by themselves to allow them to crisp up. Remove from the oven.
Spoon 1 tablespoon of beans into the bottom of each taco shell. Top with the chicken mixture, almost to the top of each shell.
Sprinkle each shell generously with shredded cheese, the more the better!
Bake for 7-10 minutes or until cheese is fully melted and the edges of the shells are browned.
Remove from the oven and top with your favorite items such as jalapenos, sour cream, cilantro, and salsa.
Enjoy!

Zucchini Patties 😘

*List of ingredients
°2 large courgettes (about 300 g)
°1 onion or shallot
°1 clove of garlic (optional)
°Aromatic herbs: flat-leaf parsley, mint, basil or coriander
°1 egg
°1 tsp flour
°2 tablespoons liquid cream (classic or vegetable)
°Salt pepper
°paprika, curry, Espelette pepper etc…
°Butter/oil for frying
*Steps:
Wash, dry and grate your courgettes. Put them in a clean tea towel and squeeze well to remove the juice
Finely chop the onion or shallot, and the parsley
Mix with the grated zucchini, then add the cream and the whole egg, mix, and finally the flour and the salt, pepper and spices, mix
Heat 20 g of butter and a little sunflower oil in a frying pan and arrange small heaps of preparation, flatten them in the shape of pancakes and cook for 3 minutes on each side, until your pancakes are golden brown
Put your pancakes on absorbent paper and serve them very hot

Ingredients
1 cup white sugar
2 tablespoons all-purpose flour
3 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups water
2 lemons, juiced and zested
2 tablespoons butter
4 egg yolks, beaten
1 (9 inch) pie crust, baked
4 egg whites
6 tablespoons white sugar
Directions
Preheat oven to 350 degrees
To Make Lemon Filling: In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter. Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture. Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour filling into baked pastry shell.
To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.
Bake in preheated oven for 10 minutes, or until meringue is golden brown.

Original Old Bay Crab Cakes
Ingredients
2 slices dried bread, crusts removed
1 Tbs. milk
1 tablespoon mayonnaise
1 tablespoon Worcestershire sauce
1 tablespoon parsley flakes
1 tablespoon baking powder
1 teaspoon Old Bay Seasoning
1/4 teaspoon salt
1 egg, beaten
1 pound lump crabmeat
vegetable oil
Directions-
In a large bowl, break bread into small pieces. Moisten with milk.
Add mayo, Worcestershire sauce, parsley, baking powder, Old Bay, salt, egg and crabmeat. Mix lightly and shape into 4 patties. Refrigerate patties 30 minutes to help keep them stay formed when cooking. Fill your frying pan with about 1/4″ vegetable oil. Over medium-high heat, fry until golden-brown on both sides. I usually flip every 1 minute to avoid over frying.

One Pot Mexican Rice Casserole is a super flavorful, quick and easy ground beef recipe! Your whole family will love this tasty casserole full of beef, rice, corn, and tons of taco flavor!
Ingredients
1 Pound Ground Beef
1 Small Onion, Diced
Salt & Pepper, To Taste
2 Tablespoons Taco Seasoning
1 Teaspoon Garlic Powder
1 Cup Long Grain White Rice
1 1/2 Cups Beef Broth
1 15 Ounce Can Corn, Drained
8 Ounces Tomato Sauce
1/2 Cup Salsa
1 Cup Shredded Cheese
Directions
Cook the ground beef and onion together with salt and pepper to taste in a large skillet over medium high heat until beef is no longer pink. Drain grease if necessary.
Return the pan to the stove and sprinkle the beef with the garlic powder and taco seasoning.
Stir in the rice, broth, corn, tomato sauce, and salsa.
Bring mixture to a boil. Cover, reduce heat and simmer for 18-20 minutes until rice is tender.
Top with cheese and return the lid to the pan for 2-3 minutes until cheese is melted.

CRAB STUFFED CHEDDAR BAY BISCUIT WITH A LEMON BUTTER SAUCE.
Ingredients
1 package Cheddar Bay Biscuit Mix
1 tsp garlic
1 tsp Italian Seasoning
Crab:
1 pound lump crab meat, be sure it is fully cooked
¼ tsp paprika
½ tsp onion powder
½ + cup mayonnaise
1 tbsp mustard
½ sleeve Ritz crackers, crushed
1 cup grated parmesan
Instructions
FIRST STEP:
Make the biscuit mix according to package directions, set to the side
Preheat the oven to 375*, spray two muffin tins with nonstick spray
SECOND STEP:
In a bowl, combine the crab meat, paprika, onion powder, mustard, mayonnaise and crushed crackers
Stir to combine well, adding a touch more mayonnaise if needed.
THIRD STEP:
Using a scoop, place some biscuit mix on your hand that has been dusted with flour, Form a cup type of biscuit
Take a scoop of the crab mix and place it in the bowl part of the biscuit
FOURTH STEP:
Cover the biscuit with a little more biscuit dough
Continue until you have used all the dough
FIFTH STEP:
Place each biscuit into a muffin tray
Bake for 12 to 15 minutes
Brush with a mixture of melted butter and 1 tsp of lemon juice

Fruit Salad to Die For
Ingredients
1 can(s)pineapple chunks, in their own juice
1 can(s)mandarin oranges, drained
1 bunchgreen grapes, halved
2bananas
1 pkgstrawberries, sliced however you want
1 boxsmall box of vanilla instant pudding (jell-o brand only – others just don’t taste right)
1you can also add other fruits that you like to this as you please.
Directions
Pour the pineapple, juice and all into a bowl. Add the pudding mix and stir until creamy. Stir in the DRAINED mandarin oranges. Add additional fruit and stir in completely until covered and creamy.
Refrigerate the salad for a while until it is nice and chilled. Don’t let it sit to long or the banana’s will turn brown. You can also serve right after making this without chilling. Personally, it is much better chilled.
