Here is next week’s meal prep menu:

Old Fashioned Stuffed Peppers
Sweet peppers stuffed with ground beef, rice, and a savory tomato sauce.
This classic recipe is topped with cheese and ready for you to take & bake.
8x8 pan (4 servings)- $20
9x13 pan (8 servings) - $40
These were a HUGE hit back in September!!
Sopapilla Cheesecake Bars
Crescent rolls are layered with a sweet cream cheese filling and a crispy, buttery cinnamon sugar crust. IYKYK!!

If you have some leftover BBQ chicken thighs and want to do something different with them, try this…

BBQ Chicken Quesadillas
1. Chop thighs.
2. Slice an onion.
3. Sauté onion.
4. In a sprayed pan, top a tortilla with shredded cheese, then chicken and onion.
5. I added bacon bits.
6. Cook until cheese is melted and tortilla is browned.
We serve with some ranch for dipping.

Let’s just call these Football Sandwiches! Ham and Swiss cheese are loaded onto Kings Hawaiian rolls and served with a sweet & savory sauce. You top them with the sauce and throw in the oven for an ooey-gooey, melty sandwich experience.

2. Pumpkin Pie Dip

Cream cheese makes an appearance again and partners with pure pumpkin in this super creamy dip. It’s great with graham crackers, vanilla wafers, or even animal crackers (who knew?)!

Here is next week’s meal prep menu:

1. Buffalo Chicken Salad

This creamy, protein-packed salad is similar to my Buffalo Chicken Dip but served cold. Made with shredded chicken, ranch seasoning, cream cheese, and blended cottage cheese (IYKYK) it makes the perfect lunch! I like it with carrots and almond crackers but you do you!

2. Baked Pork Tenderloin Meal

Marinated pork tenderloin is baked to perfection and served with mushroom rice and green beans.
