I’m improving taste wise, just a bit dense, but probably the softest loaf I’ve made, so easy to cut.

But it’s never pretty. 🤣🙄

Starter made with 100% whole wheat, bread made with unbleached bread flour
72% hydration
BF from 11:30 pm to 7:15 am
Stuck in fridge to go to appointment
Shape, in banneton, back in fridge for 7 more hours
Brush water on crust
Bake (open bake) for 25 minutes @ 450° with ice in pan
20 minutes @ 425°

This is not an ugly loaf per se!!

I did an open bake this time, with ice in the pan and ice on the bottom of the oven to create those nice blisters.

Dough temp at beginning of BF: 69°
4 sets of stretch and folds + a few finger stretches
BF for 10.5 hours
Shape
Cold ferment for about 10 hours

My score would’ve been fine if I hadn’t tried to score it deeper

Do you have excess sourdough 🍞 starter in the fridge you don’t know what to do with and you know you’re not going to use?

With Spring here, make use of it! Dilute half a cup of starter with a gallon water and use it to give your plants for fortified nutrients before they are in full bloom 🌺

You can also use leftover water from boiling tomatoes/vegetables, as well as water fermented with fruit. 🍉

Take all those “wasteful” things and make it happen 👍🏻

I can’t tag her here, I guess, but a good friend gifted me this BEAUTIFUL KitchenAid (along with a Bundt pan and several loaf/mini loaf pans), so things are about to get exciting around here 🤣🤣

There’s always just something interesting with my sourdough 🍞…

I think this was more of a shaping problem, I think I shaped my ball just a tad tight. Also this was an open bake, no Dutch oven. My score is weird, it didn’t spread at the base much BUT it rose quite a bit.

No crumb pic yet 📸, I don’t want to cut their bread, so I’ll try and convince them to do a crumb video hahaha
