Vegan Miso Mushroom Bowl

Ingredients
• 2 cups mixed mushrooms (shiitake, oyster, cremini, or king mushrooms — sliced)
• 1–2 tbsp white or yellow miso paste
• 1 tbsp tamari or soy sauce
• 1 tsp toasted sesame oil
• 1–2 tsp fresh grated ginger
• 2 garlic cloves, minced
• 1–2 stalks green onion, chopped
• 2 cups vegetable broth (low sodium)
• 1 tbsp coconut oil or avocado oil for sautéing
• Optional add-ins:
• Tofu cubes or tempeh, pan-seared
• Seaweed (wakame) for depth
• Spinach or bok choy
• Cooked rice noodles or brown rice for serving

🍲 Directions
1. Sauté the aromatics:
Heat coconut or avocado oil in a pan. Add minced garlic and grated ginger. Sauté 1 minute until fragrant.
2. Add the mushrooms:
Add your sliced mushrooms and a pinch of salt. Sauté until they start to brown and release their juices (5–7 minutes).
3. Deglaze:
Pour in the tamari (or soy sauce) and stir well, scraping any brown bits from the pan.
4. Add broth:
Pour in vegetable broth and bring to a gentle simmer. Let it cook 3–5 minutes to infuse flavor.
5. Add greens (optional):
Toss in spinach, bok choy, or any leafy greens until just wilted.
6. Add miso (important step):
In a small bowl, whisk the miso paste with a few spoonfuls of warm broth (not boiling — miso loses its probiotic benefits if overheated).
Then stir this mixture back into the pot after removing it from direct heat.
7. Finish:
Drizzle with toasted sesame oil and garnish with green onions or sesame seeds.

Creamy Tuscan White Bean Soup!
Ingredients

Base:
• 2 tbsp olive oil (or vegan butter)
• 1 medium white onion, diced
• 3–4 garlic cloves, minced
• 2 celery stalks, chopped
• 2 carrots, sliced
• 1 tsp salt (adjust to taste)
• ½ tsp black pepper
• 1 tsp Italian seasoning
• ½ tsp smoked paprika
• ½ tsp thyme

Beans & Broth:
• 2 cans (or about 3 cups) cannellini or great northern beans, drained and rinsed
• 1 cup vegetable broth (or more for desired thickness)
• 1 cup unsweetened coconut milk (or cashew cream for extra richness)

Vegetables & Greens:
• 1–2 cups chopped kale, spinach, or parsley
• ½ cup diced sun-dried tomatoes (optional for Tuscan flavor)

For Creaminess:
• ½ cup cooked white beans blended with a little broth (for natural thickness)
• OR 1 tbsp nutritional yeast for cheesy depth (optional)

Finishing Touches:
• 1–2 tbsp lemon juice (for brightness)
• Fresh parsley for garnish
• Cracked black pepper or a drizzle of olive oil before serving

This meal was absolutely DELICIOUS! I made flash-fried zucchini, creamy mashed potatoes, and a lemon caper butter sauce with crispy shiitake mushrooms. For the sauce, I used vegan butter, chopped garlic, lemon slices, fresh parsley, and let it all simmer on low before adding the crispy shiitake mushrooms. To plate, I started with the laying down my creamy mashed potatoes, layered on two slices of the crispy flash-fried zucchini, then poured the lemon caper butter sauce over top and finished with a sprinkle of fresh parsley for garnish. So flavorful, rich, and 100% vegan, a solid 10/10! 🌱
