Every year on my birthday for as long as I can remember, my mom made me a red velvet cake. It is my absolute favorite dessert( but only hers with her icing) and I only get it once a year on my birthday, so it is very special to me! My mom would only make it for me so therefore it became known as my cake!
My mom passed away in February of 2019 and 5 months later on my very first birthday without her I found myself yearning for her of course, but also for the comfort of her (my) red velvet cake. To be honest the first year was a blur. That year I believe my sister made my cake from my momâs recipe and my friends brought me a red velvet cake as well but as sweet as it was, it just wasnât the same.
That next year I had the idea to make it myself and spend the day alone with my mom in the kitchen as I tried to decipher her recipe and figure out what to do. I put on her apron, used my grandmas recipe she used, used her set of measuring spoons I kept and cried more than once during that day in the kitchen. Miraculously it turned out and tasted just like hers! I took that as a sign from her that she was there with me all along.
Anyone who knows me, knows I can make a kitchen look pretty but I was not blessed with cooking/baking skills so having said that, I was and still am determined to make my cake myself on my birthday, alone in the kitchen just me and my momâ¤ď¸
Side noteâŚ.. to this day I have not made it as good as I did that first time but every year with the smell of the cake as it comes out of the oven it takes me right back to her house if only for a second. đ
