eggplant meatballs simmered in a simple herbed tomato sauce with dollops of ricotta cheese.

These meatless meatballs are made with roasted eggplants, pecorino romano cheese, egg, garlic, fresh parsley, oregano, extra virgin olive oil, lemon, s&p-

food processor the mixture
hand roll into balls
brown them in the skillet
remove - scrap up the bits and add tomato sauce
place the balls back in and dollop the ricotta
put in oven 350 degrees for 30 minutes.

A wonderful healthy meat alternative for your Wednesday dinner plate.

-extra virgin olive oil

This salad is not the side show
of the dinner table. 🍽️
I pickled the onions and prepped the rest of the salad while the yellow beets were roasting in
the oven.

No need to peel the beets! Keep all those vitamins and nutrients- your body will say THANK YOU.

The protein pick for our side show was fish…. artic char…🐟
Our dinner was definitely
well balanced and just healthy deliciousness ….every forkful🍴

Yes…. looks like a Spanish tortilla or an Italian frittata. Whichever you choose, it is delicious and I added a heaping cup of Greek yogurt for extra protein. 🤤

Ingredients ~
potatoes, eggs, Greek yogurt, scallions, parsley, parmigiano reggiano, extra virgin olive oil, Himalayan pink salt & pepper.

Go to breakfast or part of yummy brunch spread, this dish will not disappoint. ✅
