My first bresaola finished drying today and turned out great! Next up is some antelope and elk salami (thanks to a generous meat donation by my brother-in-law). Oh, and I also found a great recipe for homemade pork roll. May have to produce a video for that one.

Finally got a day where the weather is cooperating! Smoked stuffed bell peppers. About 45 minutes at 300 and then topped with either mozzarella or beer cheddar for last 10-15 minutes.
