Restaurants that use the term “ancestral” in the marketing of their corn-based dishes…..Ancestral ways were very difficult - life depended on crops that relied on the rainfall and manual labor, not toxic chemicals. So if you promote the use of ancestral methods, please support the brave families and farmers who risk their livelihoods every year in order to grow clean, healthful, flavorful corn - the ancestral way.

When the front of the package says “just like homemade” but you’ve never been to a home in Mexico that adds Tripolyphosphate, Dextrose, phosphoric acid, propionic acid, sorbic acid, fumaric acid, cellulose gum and sodium propionate to their tortilla dough.

Our main corn producers Ulises and Janeth walking towards their corn fields in Tlaxcala, Mexico, with dog Wendy staying close by. It’s August and the corn is currently in its tender stage when it is perfect to eat fresh as elote. Tender corn, tender moment.

If there’s no color change it means your tortilla was dyed blue from chemical based food dyes. The petroleum based dye is added by tortilla producers in astonishing unregulated quantities most often free poured from 1 gallon containers into white gmo corn masa. Labeling is misleading and some brands don’t even list the blue dye as an ingredient. So do the “lime test” and make sure your blue corn tortilla is made from blue corn.
