Even with the rain rolling in this week, it’s finally starting to feel like spring at Ellijay Mushrooms 🌧️🦋
We were lucky enough to spot what looks like a Great Spangled Fritillary butterfly enjoying our marigolds — one of those little reminders that warmer days are on the way. The flowers are waking up, the butterflies are visiting, and our u-pick blooms will be ready soon 💛🌼

This Memorial Day, we want to take a moment to honor and thank Mark for his service as a retired Navy veteran 🇺🇸🐝

Now, get to know the beekeeper behind the bees at Ellijay Mushrooms!
Mark started beekeeping 8 years ago in Jacksonville, Florida after always being fascinated by bees and nature. He decided to attend a local beekeeping meeting, found a mentor, and as he says — “the rest is history.”
A self-proclaimed “nature boy,” Mark loves foraging and being outdoors, which is one of the reasons he connected so strongly with Ellijay Mushrooms. What started as a hobby quickly became something he truly loved… and luckily, a hobby that paid for itself! 🍄🌿🐝
The bees you’ll find at Ellijay Mushrooms are Italian honey bees, known for being hardworking and gentle.
After retiring from the Navy, Mark transitioned into IT work at a credit union and now resides in Blairsville, GA. We’re grateful to have his passion, knowledge, and love for nature as part of the Ellijay Mushrooms family 💛

Since 1890 when Joseph Opinel made his very first Opinel, it has been an essential belief that a good tool should be accessible to everyone.Sustainability is top of mind at Opinel - from the materials they use and the manufacturing process to the packaging of their products. (Which makes it a no brainer for us to carry these awesome utensils) 🍄‍🟫✨🍄‍🟫✨

We hope you look at the mushrooms with as mush admiration as Howie does! — he’s not only our fearless leader but also the mushroom wrangler, fungi whisperer, and the only person we know who gets excited about humidity levels…. Okay maybe we all get excited about that here at the farm 🤭

A special introduction for World Bee day…. Meet the real boss of the farm: the Queen Bee 👑🐝

You can spot our Queen with the small white dot on her head which is used by bee keepers to help identify her… like a non toxic crown. 👑

Fun fact: a queen bee can lay up to 2,000 eggs a day… which honestly makes our mushroom production schedule look lazy. 🍄😂

While she runs the hive, her worker bees are out pollinating plants, supporting biodiversity, and basically keeping nature from falling apart.

So today, on world Bee Day, we’re giving flowers to the tiny queens keeping the world buzzing. 🌼

These customer-favorite tees from have been hanging around the Ellijay Mushrooms farm store making people laugh nonstop — and honestly, we get it. Mushroom puns never get old around here. 🍄💙
Moonlight Makers is a woman-owned small business creating fun, nature-inspired designs for plant people, mushroom nerds, and anyone who appreciates a slightly unhinged mushroom pun. Which means they fit in perfectly here at the farm. 😄

The shirts are super soft, ridiculously comfy, and ideal for farmers markets,grocery store runs, or avoiding emotional breakdowns with humor and fungi…. Not that we’ve ever done that! 😉

Stop by the farm store and grab one for yourself or your favorite mushroom-loving friend before they all shiitake off. 🍄✨

🌱🍄 Meet the newest member of the Mushroom Family… Jason Edwards! 🍄🌱

We are SO excited to officially welcome Jason to the farm! Jason will be leading our very own High Tunnel operation here at the farm — growing fresh veggies, herbs, and more for our Farmstore and community 🌱✨

We are beyond excited to have his knowledge, heart for farming, and good energy out here with us. Jason brings such a genuine farmer’s spirit and passion for growing, and we can’t wait for everyone to get to know him 🍅🌿

If you’re out and about today, stop by and say hello! Jason will be at the Ellijay Farmers & Artisan Market until 1PM at his amazing booth, Forget-Me-Not-Farm, selling fresh produce and representing Ellijay Mushrooms Farm 🥕🌱 You’ll also be able to find him there every Saturday from 8:30AM–1PM bringing fresh farm-grown goodness to the community each week ✨🌿

What an honor to be featured at the Farmer Highlight Dinner at Deer & the Dove 🍄✨ Chef Terry has been supporting Ellijay Mushrooms since the early days and was one of the very first chefs to believe in what we were growing. Seeing our mushrooms showcased in such a thoughtful and beautifully executed dinner was incredibly meaningful for our whole team.
Moments like these remind us why we do what we do — growing quality ingredients, building relationships with chefs who care deeply about local food, and being part of a community that celebrates farmers and makers alike. Thank you to Chef Terry and the Deer & the Dove team for continuing to champion local farms and seasonal ingredients. We’re grateful to be part of the story. 🍽️🌱

Meet Israel Bautista, our Farm Manager here at Ellijay Mushrooms 🍄 A proud Ellijay local, Israel graduated from Gilmer High School in 2019 and has been part of the Ellijay Mushrooms family for the past 6 years.
Israel is more than just hardworking — he’s dependable, organized, and plays a huge role in keeping the farm running smoothly every day. His favorite part of the job is talking with customers and sharing just how amazing mushrooms are to grow and enjoy.
When it comes to favorites, Israel loves eating oyster mushrooms, but says growing shiitakes is the most rewarding. One of his proudest accomplishments, besides being one of the youngest farm managers in Georgia, is seeing how much Ellijay Mushrooms has grown over the years.
If you see Israel around the farm, don’t hesitate to say hello! 👨‍🌾🍄
