Last night was something special. I had the incredible privilege of speaking at and sharing my journey and the story behind CMM. Getting to meet so many of you, hear your stories, and connect on such a real level was truly unforgettable. Tater Tot Sausage Casserole

Ingredients:
2 lb breakfast sausage
1 (30-32oz) bag frozen tater tots
1 tsp salt
1/2 tsp pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1-1/2 cups shredded cheddar cheese (use Vio life for dairy free option)
1/2 cup mozzarella cheese (use Vio life for dairy-free option)
8 eggs
2 cups milk (almond or coconut milk for dairy-free)
Instructions:
Preheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray.�In a large skillet, cook sausage until no longer pink. Drain fat.
In a large bowl, toss together tater tots, cooked sausage and cheeses. Pour into a lightly greased 9x13-inch pan.
*Whisk together eggs, salt, pepper, garlic powder, onion powder and milk. Pour over tater tot mixture.
Cover and refrigerate at this point if baking later.
Bake uncovered for 60 - 70 minutes, or until eggs are set.
Notes:
Can make casserole in advance and refrigerate or freeze for later.

If baking after refrigerating, you may need to add a few minutes to the cooking time.

To bake after freezing, thaw completely and bake as directed above.

To reheat casserole after freezing, thaw completely. Cover casserole with aluminum foil and bake at 350ºF for 30 to 40 minutes, until heated through.

Viral Beef and Sweet Potato Bowl
Anti-Inflammatory Style
Makes 4 servings:
2 large sweet potatoes, peeled and diced
Avocado oil spray
1 TBS CMM Taco Seasoning
1 lb grassfed ground beef
2 TBS CMM Taco Seasoning
Avocado
Crushed red pepper
Hot honey or just plain honey

Instructions:
1. Add sweet potatoes to your air fryer and spray with oil. Sprinkle with seasonings and toss to coat. Air fry for 18 minutes, shaking halfway. You can also bake them at 400°F for 25–30 minutes, tossing halfway.
2. Sauté the ground beef and seasonings for 5–7 minutes until cooked through.
3. Add 1 cup sweet potatoes, 4 oz ground beef, 1 avocado.
4. Sprinkle with crushed red pepper and drizzle with honey. Enjoy!
