Howdy everyone!

I went on a bit of a kitchen adventure this week and wanted to share it with you!

I had the opportunity to bake a birthday cake for one of my coworkers, and she gave me complete creative freedom. Naturally... I ran with it. 😄

The result was a three-layer Yellow Cake wrapped in Chocolate Whipped Cream, coated in a rich Dark Chocolate Ganache, and finished with fresh raspberries and a little more Chocolate Whipped Cream for decoration.

I'm still not ready to start selling cakes (yet 😉), but I have to admit—it was a lot of fun stretching my baking muscles in a different direction. I even got some much-needed piping practice. Let's just say... my piping bag and I are still getting acquainted. 😂

One of my favorite things about baking is that there's always something new to learn. Whether it's cookies, cinnamon rolls, cakes, or whatever crazy idea pops into my head next, every project teaches me something. That's part of the fun for me.

🍫✨ Trying new things in the kitchen. ✨🍫

While cakes aren't currently part of the menu, that doesn't stop me from practicing and learning whenever I get the chance.

This one started as a three-layer chocolate cake, filled and crumb-coated with salted caramel buttercream before being covered in a rich dark chocolate ganache. From stacking layers to smoothing buttercream and pouring ganache, every cake teaches me something new.

I still have plenty to learn, but I'm happy with how this one came together and wanted to share a little of what I've been working on behind the scenes.

Sometimes the best way to get better at something is to keep showing up and making it again. 💜

🍪✨ Fresh out of the oven this morning… ✨🍪

Today’s lineup included:
🤠 Cowboy Cookies loaded with pecans and walnuts
🍋 Bright and cozy Lemon Cookies
🫐 Blueberry & White Chocolate packed with sweet berries and creamy bites throughout

One of my favorite parts of this kitchen is getting to bounce between classic comfort flavors and new ideas that keep finding their way onto the trays. Some flavors stick around, some are experiments, and some turn into the next surprise favorite.

🫐✨ There’s just something about a fresh pan of cinnamon rolls… ✨🫐

Soft, warm, and layered with that classic cinnamon swirl, these come out of the oven ready to be shared — or not. No judgment here.

This batch got the blueberry treatment, finished with a generous layer of frosting and just enough fruit to bring a little brightness to all that cozy goodness.

🍋✨ Back in the kitchen, chasing a little nostalgia… ✨🍋

I’ve been working on a new cookie inspired by those classic Lemonhead candies — bright, citrusy, and just the right kind of sweet.

This was a pilot batch, and it got really close. The flavor is there, just needs a little more lemon and a bit of fine-tuning to get the texture exactly where I want it. That’s part of the process — small tweaks until it feels just right.

This is also the kind of thing that often finds its way into the Monthly Mystery Cookie Boxes (here: https://www.dorke1.com/store-page/p/monthly-cookie-box-6-cookies) first. New ideas, test flavors, and the occasional surprise before anything officially lands on the menu.

Boxes go out mid-month, and they’ve become a fun way to share what’s happening behind the scenes in the kitchen.

🍪💜 This one meant a lot. 💜🍪

I recently had the chance to send some cookies over to a group of students, and I got this message back:

“Very Good, Very Very Good, Perfect, Not too dry – not too gooey – just right, Delicious, Scrumptious, Good texture, a hint of cinnamon… I want another, Mmmm good, Fantastic, Incredible, Sehr Gut…”

I don’t know if it gets much better than that. 😊

Hearing reactions like this — especially from kids who are honest in the best way — is such a good reminder of why I love doing this. Just making something simple that people genuinely enjoy.

I’m really grateful I got to be a small part of their day. 💜
