Chicken wing tips

A) Marinade: - Everyday hot sauce and pickle juice (30 min -hr in fridge)

B) for Seasoning (link in bio)

C) sauce - my new vinegar sauce (coming soon) + mustard sauce

- at 300-325

Cook wings to about 175-180 before the sauce - let finish close to 200

Just some inspiration for your weekend -

Backyard brisket -

trim however you like just try to get most of the thick fat that won’t render off of it and try to round all the corners

from there, it’s just a simple layer of W sauce and a generous coating of my Rub

set up the smoker for 225 -240 and throw it in overnight - in the morning once it hits about 165 internal wrapped in butcher paper with some beef tallow and back on the smoker until it hits 203.

rest for at least a couple hours in a cooler, but the longer the better. Mine was a little too hot for my liking on the slice, but it is what it is!

Simple pork shoulder

(link in bio) in fridge for a few hours to overnight

Set smoker to 225- 250 - let roll till 165 internal

Wrap - a little butter, sprinkle of brown sugar and a splash of my vinegar sauce (available soon!)

Back on smoker till 203 - rest for at least an hour and shred it!

**tip - on the UDS I like the fat cap down to protect the meat since - other smokers you can do fat cap up

Always a hit - Beef short ribs, Dino, chuck ribs, there are a couple different cuts and names for them but all great!

Treat like a brisket:
W Sauce

Smoker at 250
—
Cook till 175 IT
Drizzle tallow and wrap in Butcher paper
Back on till 203
Rest for an hour
